People don't pay attention enough...you are right on Peter...he is is limited to duplicating a power. Previously he settled on keeping Sylar's (or his father's)...
Did they show Sylar's dad do something besides the head slice?
Doubtful. First off while he meets Sylar in the first season, he doesn't slice anyone open at that time so there's no way he could have multiple powers at that point (unless you want to argue that Peter + Sylar = symbiotic powers that work together avoiding the deficiencies of the other two). Additionally, that would have made it all to easy to avoid the NYC meltdown, just grab a different hero and obtain their power instead. Thus the loss and regain of powers yielded a slightly different power than he had before unless it's still developing.
Re: having his dad's powers. It's possible, but there is no evidence yet that he has sapped any powers.
1 power at a time is clearly how it works now, but whether he will stay this way or revert back to god mode is as of yet, unknown.
Sylar's Dad being telekinetic is ironic (recall that is not Sylar's innate power, he clubbed a dude who could do it and used a saw to open his brain). On this note, it could be argued that if Peter absorbs Sylar's power, all he gains is the ability to examine brains and learn new powers.
