With holidays this week for both Canada and 'Merica, about time we had a BBQ thread. What's everyone cooking up for their backyard bash?
This year, I'm doing something a bit different: Jerk Chicken. I made it a bit milder than I normally like.
Jalapeno (I left the seeds in. Thought about Scotch Bonnet but some folks might find that too hot)
Onion
Lime Juice
Thyme
Brown Sugar
All Spice
Salt
Hot sauce (I used Siracha since I had it on hand)
Blend that all together then rub on chicken. Got it chilling out in the fridge over night to absorb all those flavours.
Service it with the classic side of rice and back beans.
To drink? Keeping with the Caribbean theme, mojitos. I've got plenty of mint fresh from the garden to use up.
