Holiday BBQers! What's on the menu?

With holidays this week for both Canada and 'Merica, about time we had a BBQ thread. What's everyone cooking up for their backyard bash?

This year, I'm doing something a bit different: Jerk Chicken. I made it a bit milder than I normally like.

Jalapeno (I left the seeds in. Thought about Scotch Bonnet but some folks might find that too hot)
Onion
Lime Juice
Thyme
Brown Sugar
All Spice
Salt
Hot sauce (I used Siracha since I had it on hand)

Blend that all together then rub on chicken. Got it chilling out in the fridge over night to absorb all those flavours.

Service it with the classic side of rice and back beans.

To drink? Keeping with the Caribbean theme, mojitos. I've got plenty of mint fresh from the garden to use up.

fire in the sky.

Pork shoulder, buffalo and, possibly home made pizza. Oh and, BEER!

I'm home all day by myself on Saturday and Sunday morning, but not sure I want to hang around the house and smoke or BBQ anything for just one person.

It's a lot of work to prepare the seasonings/rub, prepare the meat, smoke/cook it, and then debone or otherwise put it away and clean everything up when done.

The only thing wrong with that for me is that my neighbors are vegetarian's so nothing is going to be calling my name, I need new neighbors. LOL

Sadly, here in the blighted Northeast, we don't barbecue. We just use the word.

Jerk chicken sounds good.
Have to make some beer as well. Need to make at least 2 new 5 gallon batches this weekend.

May do a brisket as well.

Your grill is either not hot enough or its not close enough to the coals considering the complete and total lack of carmelizing on those short ribs (I think that's what they are).

I did pulled pork last time. Took over 8 hours on the smoker.

This time, I'll just do some burgers and hot dogs. Probably some chicken thighs for people who prefer chicken.

A 6lbs of brisket, 7lbs of pork shoulder, once they are done and resting I will crank up the BGE for poppers and wings.

Cornell chicken is my favorite way to grill chicken. You do all the prep the night before, it's really nice just to open up a vacu or zip bag, put the chicken on the grill and cook it. Also very tasty - sort of tangy. Different but even picky people will like it.

I have guests coming up who have a child with severe food allergies. So . . . gluten free bread, unseasoned chicken, and blech . . . .

There needs to be a unwritten social rule that states that if you're allergic to goddamn everything, you need to bring your own food to events.

I also refuse to believe there are people in this world that are allergic to all goddamn spices and gluten and whatever chemical they can make up that they're allegic to simultaneously.

Because at that point, I'm more convinced they have Lupus than an allergy.

Didn't even BBQ on the 4th, been a bit of it with an ankle injury be we're doing some tonight, the wife found some Lumps that are almost logs, and have some Ribs, Dogs and Brats getting ready.
