When it is over 49% cat they can't call it beef jerky. Just make sure they are "free range" cats.
Free range are more tender. Actually (and this is not intended to stereotype) a buddy of mine is a vp at Kelloggs, he did a long haul in China. They do eat a lot of weird animals there, including cats. He has a particularly bad story about dinner with some senior communist officials where it was basically a scene right out of indiana jones, where they put a live monkey in the middle of the table, then took turns hitting it in the head until it passed out. There's many jerky people here who enjoy tillamook jerky the most. I just ordered some, it's also free shipping over $35, and it's about $12 a pound if you buy the natural style 8oz bags.

Chinese jerky is completely different from regular beef jerky. It's softer and more supple meat, not hard and tough like a rock. As a result, it's easier to eat more than you should/would with regular style jerky. Spicy fruit is probably my favorite flavor. Someone plz post on if this store's jerky is any good!
