There's more to it than the ABILITY. If you cook every night (or at least a few times a week) a good set of knives is a valuable investment. The weight, balance, construction, and materials all have an effect as to how EFFECTIVELY you're able to cut food. Try dicing tomatoes with a butter knife or carving a turkey. Slicing bread is much, much easier (no squished slices) with a proper knife. Even cheap knives that were designed for the purpose would do a better job.
The problem with cheaper knives is how well you're able to do something. Cooking becomes a chore and by the time you're done slicing your half-frozen chicken breast for the stir-fry, you're ready to go to sleep (or worse, the emergency room).
How much does it suck to use a crappy 15" monitor when you're used to a 19? Knives can be the same way.
