Once you plead not guilty, you give up the right to go to traffic school. If you plead no contest or guilty, then you pay the fine and then u have to option of going to traffic school. however, once you plead not guilty, any traffic school is waived.
you'll go to trial, and you'll do exactly what you stated in your post. if the judge rules in your favor, then you are home free. if he rules in favor of the cop, then you are guilty, and you pay a fine, and it goes on your insurance. no traffic school for you.
this is the CA law. and i know this because i've done my research.
my opinion is just to pay it and to go traffic school. at least it won't show up on your insurance, and your parents won't have to know about it (if that is a concern for you).
you can try and beat it, but going to court almost always ends up as a guilty conviction for you (i have several cop friends).
u may want to check out www.mrtraffic.com and talk to they guy who runs that site. most likely he'll flame you and yell at you for speeding, but he offers sound advice. just be prepared for him to call you an unsafe driver.
