A really easy meal (requires microwave):

Ingredients:
Brown Rice
Flower Tortillas (soft taco shell type)
Sharp Cheddar
Diced chicken breast (Tyson even sells these frozen and pre-cooked so you don't have to cook the chicken!)

The hardest part is making the brown rice. But just a few cups of dry brown rice is enough for a month's worth of tortillas.

Once the brown rice is done, heat chicken and cheese in the microwave until the chicken is warm and the cheese is melted. Place rice, chicken and cheese on tortilla. Wrap. Eat. Yum. Once you have some brown rice in your fridge, it takes less than 2 minutes to make this meal...I really like it when I'm in a rush.

I have some other really good recipies that taste a lot better but are also much more time consuming.

The George foreman grill is a batchelor's best friend
It won't burn stuff, just dry it out, if you get too busy and forget
Seriously, it does a boneless chicken breast in about 4 minutes, burgers, veggies, etc.

Get a copy of The Joy of Cooking. It's far and away the most complete recipie book out there. Much discussion of cooking techniques as well...everything from simple stuff all the way to complicated stuff like making your own fish stock from scratch or making a demiglace. I use this thing constantly.

Macaroni and cheese:
  • Ingredients:

    • 1 box of macaroni and cheese
      1/4 cup of milk
2 tbsp. butter (about 1/4 stick)
Boil water, dump in pasta (but not cheese packet)
    boil until pasta is soft
drain in colander, return cooked pasta to pan
add butter, stir, allowing butter to melt
add milk and contents of cheese packet
    stir until mixed
    enjoy

Ain't that the truth!
I made this yesterday, but with mako shark instead of tuna steak on my foreman grill.
Man was that good!

Hey, Jzero, that's just like the tuna recipe I usually use, except I add a bunch of wasabi as well. If you like spicy stuff, try throwing some in!

DAMMIT! I have a whole thing of wasabe powder, too!
Oh well....they only had big pieces of shark, so I have another piece in the freezer...I'll make sure I kick it up next time I make it

If the issue is effort and not time, it's incredibly easy to make a wonderful chicken dinner.

Chicken dinner:

Ingredients:
1 whole chicken
A handful of idaho baked potatoes
Basil, parsely, salt and pepper

Directions:
Place whole chicken on its back in a baking pan
Sprinkle basil, parsely, salt and pepper on chicken, use however much you think you'd like. It doesn't really matter.
Place in oven.
Set temperature to 350.
Ignore for ~1 hour
Place potatoes on oven rack
Baste chicken
Ignore for ~30 minutes
Baste chicken
Ignore for ~30 minutes

Viola, your chicken is done. Note: you may have to ignore for longer periods of time depending on the size of your chicken.
This meal can make for a week's worth of leftovers easy. For even more variety, cook your favorite vegetable(s) in the microwave.

I usually make a meal like this on the weekend, and then enjoy the leftovers all week.

Get 3 good pots, a cast iron skillet and 3 good knives. Or spend the rest of your life wondering why you did not.

Get a small pot. Go to local grocery store. Buy all available Ramen Soup Packages.
Cost: about 15cents each, or about 7 for a dollar.
365*3meals a day==around 1100, divided by 7==about $175
So, for $175 you can feed yourself for a year.
