Salty, i'm a bit surprised by this question. I can't believe you don't have a theory on this too - one that is somehow different yet also exactly the same as the leading mainstream theory... on how to cook fried chicken.

Thanks guys. Can one get a decent pressure cooker for the house? That video says make original recipe KFC chicken at home, but then they just fry and bake the chicken, which is apparently not how KFC actually does it LOL. You can't make this stuff up!

eh, the pressure cookers are under $100. The pressure fryers on that page are above $700. I can't morally recommend using a regular pressure cooker to heat up oil at steel-melting temperatures and gravity; but if you do decide to do that, please follow Ironwing's advice and provide before and after pictures of your face.

my guess is that the pressure fryer would have thicker-gauged steel, heavier....just better built overall. They both cook the same way--high temperature, but importantly: really high gravity to bring actual effective temperature up to around 500 C or so...I think.

I haven't looked carefully but I suspect the blowout plug on a pressure fryer isn't positioned and designed to blow hot grease all over the kitchen. Pressure cooker plugs are on the lid.

Edit: I stand corrected. The blowout plug on the $700 pressure fryer is on the top of the lid.

They should put a pilot flame under the port, that way the vaporized boiling grease gets incinerated before it gets all over everything.

they fry it in hog lard , that they get in 50 lb solid blocks . Franchisee has a place across from mine , he bitches about that and his employees all the time. He has three stores .

KFC doesn't use lard anymore. Those are veggie shortening blocks that melt to an oil when heated.
