How does KFC cook their fried chicken?

I *LOVE* KFC original recipe chicken. Now, don't get me wrong, I love other fried chicken, especially Popeye's, which is arguably better.

However, one thing seems unique about KFC chicken - it seems less greasy that other chicken places, and never seems to be burning hot. Its almost like they are not frying it. But obviously it is *fried* chicken. So what are they doing different (if I have indeed picked up on something, but I'm not usually wrong)? I'd like to try and replicate it at home if at all possible.

Salty, i'm a bit surprised by this question. I can't believe you don't have a theory on this too - one that is somehow different yet also exactly the same as the leading mainstream theory... on how to cook fried chicken.

I'm pretty sure that it is fried in ball sweat. Because that is how it tastes.

Guessing from the one time the place I worked at trying to sell fried chicken, it's a pressurized fryer.

They use heat to denature proteins and partially oxidize sugars in the chicken.

For me I find it the opposite. KFC seems greasier than Popeye's to me. Although it's been awhile since I've had either, and Popeye's is two towns away vs 1 for KFC.

Biggest part of it is to brine the chicken before breading. Just swap out the word 'choke' with 'brine' in your mantra, you'll never forget.

I dunno how they make it but my buddy worked on their raw chicken semi trailers. Said they didn't use refrigeration and it was like rotting meat every time it stunk so bad it'd make you puke. He wouldn't eat at kfc for a decade.

they fry it in hog lard , that they get in 50 lb solid blocks . Franchisee has a place across from mine , he bitches about that and his employees all the time. He has three stores .

Yeah....pressurized fryers use less oil. This is a big part of why the chicken is less-greasy and how they can cut the cooking time by 20-30%. I think even the process of letting the chicken rest under the heat lamps helps with its texture....but for me, I remember getting a bucket of KFC chicken (before the abbreviated it) and eating it on a concrete picnic bench at a park with my family.

I grew up a few hours from where KFC started....what's even funnier is that I learned that the first franchise opened in Salt Lake City while I was out there on a business trip... Who would have guessed the franchise would have started that far away from the original location...crazy if you ask me.

Thanks guys. Can one get a decent pressure cooker for the house? That video says make original recipe KFC chicken at home, but then they just fry and bake the chicken, which is apparently not how KFC actually does it LOL. You can't make this stuff up!
