Left over Easter egg. It has been in the fridge since Sunday afternoon. Its blue with little stick-on ducks if that matters.

My grandfather has shelled hardboiled eggs in a bowl on the counter for days. And eats them little by little.

I'd also expect that they'd last longer than a week. Fresh eggs last about a month at room temperature. We don't bother refrigerating ours most of the time.

i was wrong, i guess

eggs
Hard-cooked 1 week

I wonder why they last longer uncooked? I would think they spoil quicker raw.

Probably has something to do with the shell... They last longer if they're unwashed too. We never bother with washing eggs. I have a bunch of people who want to buy brown eggs from me; I tell them, "I'll just give them to you if you stop by, but I'm not washing eggs; if I was going to go to the trouble of washing them, I'd sooner just break them open on the ground for the chickens to eat" - which is what I do with the dirtiest of the eggs.

FWIW I just learned how to make deviled eggs:

1. Boil eggs
2. De-shell and Slice in half length-wise
3. Scoop out the yolk (yellow ball)
4. Mush up yolk in bowl with fork along with:

About equal parts mayo or miracle whip
Teaspoon or two of pickle juice (from a jar of pickles)
Salt
Pepper
Dry yellow mustard (powder)
* Mix to desired consistency and alter mixture until you like it

5. Spoon mixture back into sliced eggs
6. Shake a little Paprika on the top for looks

Not much. But, the difference between fresh farm eggs and eggs from a store is pretty noticeable.

I have to answer the Brown eggs and White egg question!
I hear them on television all the time, their standard answer is: "Both are the same nutritionally".
While this may be true, I don't feel that they are answering the real question:

Brown eggs have a darker and richer tasting yolk than White eggs! I don't really care for fried eggs much myself, but when I do eat them, I much prefer the Brown eggs when available.

That, my friend, is the difference between White eggs and Brown eggs.
