Well, for no particular reason, I'm inclined to agree, though realistically, I don't see how it would make any real difference, other than netting the government a few more $$ in taxes on what would have been "tips". What I would really like to see is greater equality between what the FOH and BOH staff earn, but that would be if perhaps not quite impossible, certainly much harder to legislate...

I think your point 2 addresses your point 1, elimination of tipping and raising of prices across the board would lead to better equality between BOH and FOH.

The problem solves itself. $700 food and drink in SoCal will have $60 in tax, and my sad vulgar self would leave $100.

After working our butts off for six months with loads of unpaid overtime and the burden that places on families, our team got a project out on time with the reward of dinner out with wives someplace nice. Only 3 star, but it was cash only, got to keep out the common folk, and the expected tip was 20%. Waiter knew our boss by name. Its enough to make you want to vote for Sanders.

Three Michelin stars is the top rating possible in their guide and it's reserved for the "best of the best". Chefs have been known to kill themselves when they lose Michelin stars.

And as far as I know, there are no three Michelin star places that are cash-only.

I'm not being snide, but am really curious - why do you think so? I just don't see any particular incentive for owners/managers to raise BOH compensation just because part of the FOH's income would no longer cost-shifted directly onto the diner? Of course, the dirty little not-so-secret is that seriously enforcing immigration laws on to low- and middle-end restaurants would probably help that particular inequity, but it would also end up raising prices even higher (as would be the case in just about every one of the most widely patronized service industries in this, not to mention most other "developed" countries...)

current difficulty in hiring and retaining BOH staff would indicate that wages are too low. Owners are currently unable to shift/pool tip revenue to BOH staff to reduce inequality and increase BOH pay.

So you take food advice from a guy that makes tires for a living?











It sounds weird but they started it in 1900 and back then I'm pretty sure you needed to be rich to have a car. So it became the defacto hey stop at this sweet ass restaurant and be rich with other rich. It just snow balled from there. Its serious. Like for the service side the reviewer will go into the restroom and place a paperclip somewhere and go check at the end of the meal if it is still there. If its still there no 3 stars. To get 3 stars you must be so good so exceptional on every front of service and food that there is no contest. The reviewer must submit.

and its not just 1 visit. They do like 3 to 5 visits. so you better be on point for them all.

A good friend of mine went to Bora Bora and it cost them almost $20,000 for a 1 week vacation. Just to get from the hotel to a restaurant cost $75 per person for the boat ride... ONE WAY! They are going to Africa in June on safari and that trip is costing them $65,000 for 4 people.

Africa needs the money: it's mostly charity work at that point.

my 10 year wedding anniversary trip is going to be to bora bora and tahiti, staying in overwater bungaloes. $10k is the minimum i'm planning to spend on that trip.

Both are quite possibly 'making' $4/hr.

Great servers don't choose to work at great restaurants just because the food is better.
