How to cook sausages

I'm a noob. I've tried to advance my cooking skills beyond making toast and have run into some problems. I'm not quite sure how to make sausages. On the side of the package it says "Medium heat for 8-10 minutes".

I put 2 fairly large sized sausages in a pan and added some oil. When I heated them, there was a lot of splashing, which was difficult to clean up.

So today, I heated the sausages without any oil. They got burned on the sides. I'm not totally sure if they were cooked all the way on the inside.

Should I try heating them in water? Any advice is appreciated.

No, oil is good. Use just enough to prevent sticking and experiment with the heat. If they splatter too much, reduce heat a little. You have to deal with a little splattering though, it's the price you pay for sausage, bacon and other yummy dead pork products.

Yeah you just have to deal with the oil. There isn't really a way around it. Generally oil will splatter if there is water there so make sure the sausages aren't wet (or frozen with ice chunks). A relatively painless way of cooking them is to grill them.

There's a difference between dinner sausages and breakfast sausages. The ones that are cooked in oil for 8-10 minutes are breakfast sausages and they are NOT boiled in beer and then grilled.

I like to serve my sausage at room temperature smothered in underwear with a light cream sauce, any takers???

If you want to fry them, just put a lid on your frying pan, no more oil splatter. You can also microwave them. Just wrap them in a paper towel to absorb any grease.

If you are cooking any kind of polish or smoked sausage, you can boil them for a few minutes and then simmer them in saurkraut for an hour or so.

When he's talking about graduating from cooking toast, I don't think he meant it as a breakfast thing. I think he meant that toast is the easiest thing in the world to cook...

Yep, I got the feeeling he was talking about breakfast sausages. For those I just buy the brown &amp; serve, easier. For Italian sausages I put 'em in boiling water, wait an hour, and chow down, usually with fried peppers &amp; onions on rolls... mmmm...

Gurck, italian sausage is awesome that way. But I fry them rather than boil them when I make sammiches out of 'em.

And attempting to cook "fairly large" sausages in 8-10 minutes = trichinosis. Any sausage that has instructions to cook for 8-10 minutes is CLEARLY a breakfast sausage.

OK. Thanks for the advice.

For the record, I was making spicy chicken &amp; turkey sausages that are filled with bits of red pepper and corn. Grilling is not an option for me. And I don't think the beer thing would work for these kinds of sausages, which are already flavored. Plus it may get to be cost prohibitive. So I will try frying them in oil again.
