A. The galaxy is so tolerant that it's simply a non-issue that nobody brings up. The 2½ relationships we witness on-screen just happen to be heterosexual.

B. All sorts of racist, sexist and xenophobic organizations have ruled the galaxy at points, maybe some of them were homophobic as well and their policies have lingered in the populace.

KOTOR (specifically KOTOR 2) had classic Bioware ambiguity of relationships which allowed for Girl-on-Girl relationships.
