Coat the couter top with a tacky substance like rubber cement, you get the idea. Cat will jump up there a few times durring the week, get paws all tacky, they hate this, and will never want to jump up there again.

Could lay strips of tape over it to I guess for less mess to clean up, but super fun to watch the cat run around the house freaking out because it has tape stuck to the bottom of its paws

And lastly it will further increase their fear of water, if it works, which means if you ever have to bathe or clean the cat, you're in for a world of hurt.

My cats aren't afraid of being bathed, and I spray them all the time when they are doing something wrong. It usually works.

I have heard, but not tested, that cats hate to step on aluminum foil. You could try laying out a couple strips of it and see if it works. Cheap, and it won't damage your countertops at all.

My folks stop their cat from sitting on/sleeping on stuff by covering it with issues of 'The Economist', and that seems to work...

Spray the faucet and counter tops with fox urine. Cats won't go near what they think will eat them.

(This tip/joke was liberated from "The Daily Show" and Jon Stewart's writing staff.)

He actually likes water and doesn't mind at all getting wet, I've tried using a spray bottle to stop him from doing things and he doesn't care at all, you can actually directly spray him from inches away and he'll just keep doing whatever he's doing.
That's a bad sign. I had one that would wade thru sticky tape and pepper to do whatever she wanted to do.
Is there a "Cat Whisperer" in this forum?

Tie some balloons down, and have them near the end of the counter. The cat will jump up into the balloons, get scared shitless, and stop jumping on the counters

Smear Crisco on the edges of the counter so when the cat jumps up there he slips and falls down.

Get beer, sit back, and watch.

How do you achieve the bolded part above? Or do you assume that every time = when you are around?

put a towel and have it hang off the edge so when the cat jumps on the towel with 1/2 his body, it will slip and the cat will fall.

also, super hot sauce on the end of the faucet is a good idea too
