The issue with processing itself is the stripping of nutrients to improve shelf life and/or reduce costs. Many “fresh” cheeses actually has some beneficial nutrients from fermentation that are beneficial for health.
Processing in general is bad because it is usually done to reduce costs or extend shelf life. Nixtamalization is processing, but it adds a step and thus increases cost. The process increases bioavailability of nutrients present in corn.
The other ingredients still would cause harm in less processed foods. Free flour or sugar is going to do its thing if it is made into bread or Cheez-it’s. THBQ is one of those "safe" chemicals that might not be safe. Seed oils like soybean oil is not good to eat.
