I too had trouble finding them as all the meat shops in my area...they didn't know what i meant when I asked for " picanha".

I finally found out it goes by the name " coulotte" around my area... try asking for that.. maybe that will help

Some picanha and Brazilian sausage on the Kamado Joe rotisserie for lunch. Absolutely delicious.





Looks fantastic Jeeebus! I love picanha. It's my third favorite cut of beef behind ribeye and short ribs.

Forgot to ask. What's Brazilian sausage? How is it different if it's different at all?

I read they call picanha Sirloin Cap or Rump Cap in the US, but, that most butches break the meat down into other cuts.... So it may be hard to find ...
Also, after reading Echo's post ... chick out this old post ...

I just bought some picanha at Costco the other day. This is how they label it at Costco. The picanha at Costco doesn't have the fat cap. But it's still delicious and regular purchase for me.

I'm still grilling and smoking regularly. I've grown to love my $109 Walmart clearance Pitboss Copperhead 5 pellet smoker. I've been using that lot lately along with Weber kettle.

smoked beef ribs from PB Copperhead. Salt & pepper rub.

Smoked baby backs on my easy bake oven, AKA Pit Boss Copperhead 5 pellet smoker. Used Pit Boss competition blend pellets. 40 lb pellets for $15 everyday price at Lowes. I love ribs from the pellet smoker. The smoke profile is lighter but very pleasant.



The bend test. I use this test to see if the ribs are done or not. If the ribs bend and the meat tears slightly when I pick it up with tongs, I call it done.

Made some delicious Berkshire pork thick chops on the kamado joe for dinner. So decadent/juicy - thankful to have a few stores around with meat that is infinitely better than the crap most grocery stores are putting on the shelves.

So you got the good stuff! That chop looks fantastic. I bet it tasted good as it looks if not better. I don't know any store around me that sells Berkshire or Kurobuta pork. I've read Whole Foods sells it but I haven't checked since I don't shop at Whole Foods. If I want Berkshire, I have to order online from places like Crowd Cow, Creekstone Farm, or Snake RIver Farms.

If I'm going to be wiped out by a 185 mph storm, I may as well do so on a full stomach. St Louis style ribs - smoked for about 6 hours and finished with an amazing sauce consisting of a lot (bbq sauce, pineapple juice, soy sauce, roasted garlic, pureed fresh pineapple, Jack Daniels, etc.). Very sweet, tender, and flavorful.

That finishing sauce sounds awesome! Now I want some spares. I think Publix is having a sale on St. Louis spares for $1.99 /lb. I might go buy some later today to smoke on my Easy Bake oven later this week.

I smoked a pork butt on Friday and used the leftover pulled pork on Saturday to make bibimbap.


Then yesterday, I smoked bone-in pork rib roast on the Big Joe. Smoked it at around 275 F with some cherry wood until 132 F internal and then finish seared it to ~145 F.




Today is salad day. I'm going to grill some prime picanha to make steak Caesar salad.

Costco prime picanha. My favorite steak after the ribeye. I grilled it on the Weber kettle using Kingsford Blue charcoal. Paired it with Costco Caesar salad for really simple dinner. I feel healthier already.







My dog received her diet portion.

Today I smoked spare ribs and beef cheeks on the Big Joe. I bought full spares from Sam's Club and trimmed and saved the rib tips for later use. I seasoned the spare ribs with celery salt, black pepper, and paprika. Beef cheeks with Trader Joe's Coffee and Garlic rub and celery salt. For fuel, I used Cowboy charcoal lump with cherry wood chunks and ran the Big Joe at 250 F.

After about 4 hours, the spare ribs were done. The beef cheeks also had the bark and the color I wanted so I placed it in pan to braise with diced onion, beef broth, and Worcestershire sauce and covered with foil.


The spare ribs were terrific. It was my first time using celery salt instead of kosher salt. I liked the taste and the color celery seed gave the smoked meat.

I let the beef cheeks go another 3 hours covered at 250 F before I pulled it.






I made barbacoa tacos with the shredded beef cheeks, onions, cilantro, salsa, and flour tortilla.

Check out the marbling on the prime picanha I ate the other day. I sliced it thin to grill on my indoor tabletop butane stove.

that picanha looks amazing - any pictures of it in 1 piece?
No, I thought I had one but don't. I bought this one because I could see the marbling through the cryovac. I've had good luck with picanha from Costco.

I've never seen picanha at Costco. Do they sell it under a different name? I'm fortunate enough to have multiple sources around here for it, so maybe I've just never looked closely enough at Costco.

Costco sells picanha under the name Top Sirloin Cap Whole. You'll find it in the Top Sirloin steak section. Here's a picture.


The meat on the left is Top Sirloin Cap Whole (picanha). The meat on the right is Top Sirloin Whole Cap Off (sirloin steak that's left after the picanha is removed). You don't want the steak on the right. It's like how Costco sells the prime ribeye cap and the ribeye center separately.

One thing to note is that the fat cap on the picanha is removed at the factory. So you won't find any fat cap on picanha from Costco. But the plus is there's practically nothing to trim on Costco picanha so your effective meat yield is like 99%. It's not like other Sub=Primal you buy like whole ribeye, brisket, tri-tip, etc where you lose like 30% of the yield after you trim all the hard fat off the meat. You can usually find USDA Prime picanha in the $6-$7 /lb range and USDA Choice picanha in the $4-$6 /lb range.

Here's like 2 year old picture where I cut picanha into pieces to grill. I don't remember if this was USDA Choice or Prime grade from Costco. You can see how this meat is also nicely marbled. Picanha is the best bang for buck steak deal at Costco.

Yesterday, I smoked some spare ribs. I bought full spares, trimmed it, and saved the rib tips. Tonight I grilled those rib tips at the table. It was my first time grilling it KBBQ style at the table. Grilled rib tips turned out way better than I expected. Very meaty and filling with less fat than pork belly. Sort of like pork neck but tastier. I think I'm going to buy full spares from now on instead of the St. Louis cut. Why pay more to get less?

Just built a house and don't have a dedicated smoker yet. Did this on a Weber Master-Touch kettle, but I am ordering a Weber Smoky Mountain cooker soon.
