Some of my cooks this week.

Grilled red snappers seasoned with sea salt on the Weber kettle.




Boneless beef short ribs from May 2017 that I found in back of my freezer that I thawed, ribboned, and grilled






3.75 lb beef top round I smoked today. I rubbed the meat with Trader Joe's Coffee and Garlic rub and along with some celery salt. Smoked it in Kamado Joe Jr. with some cherry wood chips at around 275 F or so until the meat internal hit around 135 F. Took about 2 hours. Sliced it thin for sandwich.


Sort of made banh mi sandwich with the smoked roast beef. Used french bread and topped the sandwich with mayo, spicy mustard, provolone cheese, smoked roast beef, ham, shredded pickled carrots and white radishes, fresh cucumber slices, cilantro, sliced chili pepper, lettuce, and tomatoes.

I'm social distancing from my smoker/bbq today. Decided to switch it up and do braised short ribs instead. So delicious.

A local shop have whole AA brisket for cheap, is AA ok for smoke? If so care to give me a quick run down on temp and cook time? Also just throw it in or put it on a tray?

Also is brisket good for ground(burger)? Do I need to add other cut?

Smoker BBQ newbie here.

It's just stainless mixing bowl with the bottom cut off. I used a jig saw to cut off the bottom. So it's open at the top and bottom. No holes on the sides.

Don't bother making it. Just buy Weber charcoal basket. It's more versatile and better. That's what I use most of the time.

AA is Canadian grade. It sounds like it's between US Choice and US Select. That's perfectly fine. You can look back on this thread. I smoked several briskets and posted my notes.

Brisket is great for ground burger. You can just use brisket or add any other cut you want like short ribs or chuck roll.

Because the fish is cooked indirect, it won't really stick to the grate. Now I like to finish sear it at the end and that's when it can stick. You can try to minimize the sticking by spraying oil on the fish before finishing direct on the flame. Or you can use fish basket.

I bought a GMG Davy Crockett pellet smoker. Didn’t want a full size pellet smoker right now so a bought the smallest one that can still smoke a standard size full packet brisket. Going to be making beef jerky tomorrow and a brisket for Memorial Day.

Eventually this will be just for camping and will be replaced for every day smoking/bbqing when I get my outdoor kitchen built. I was originally going to just wait till then to have a smoker but my favorite bbq place jacked the price of brisket to $28/lb.

Congrats! That's nice portable unit. Should serve you well. I'm a big fan of pellet smoker and think it's the best tool for most people.

Kroger had choice briskets for $1.67 a pound. And baby back ribs two for one. Limit 2 on each. Needless to say I bought 2 of each.

Breaking it in with beef jerky tomorrow. Probably do ribs on Friday and Brisket on Saturday or Sunday.

My sous vide brisket that is sous vide and. finished off on a gas grill with a wood chip tube worked okay(always to dry because lack of fat caps on pre cut brisket) but this should be a lot better since it’s whole brisket.

Those do look great. Made 3 racks yesterday, 2 came out nice but i think the foil came undone on the third so it was a bit dry.

We're in the process of spending stupid money on having an outdoor kitchen built. Should be nice in a month or so.

I got a traeger a little over a month ago. I've done a few things. Pulled pork, ribs, burgers and stuff. I didn't like the way veggies cooked so I'm still doing those on my grill.

I got some ribs out to thaw and my wife asked me if I was doing them on the traeger. I said I was and she said I should do them on the grill and my daughters agreed with her.. After some discussion it turns out the family prefers food cooked on the gas grill with wood chips or on the charcoal grill to food cooked on the traeger.

That is good to know. I have been lustfully looking at the Weber Smokefire for a couple of months, but might have to do some more research.

Anyone else have feedback on pellet grills?

I'm a huge Weber fan but everything I've read about Smokefire says it's complete disaster. I would avoid Weber Smokefire.

I'm huge fan of pellet grills. I love my PitBoss Copperhead 5 pellet smoker. Smoke profile is lighter than charcoal but very pleasant. I prefer ribs from pellet grill over charcoal.

Gave ribs another shot yesterday. They turned out pretty good. Wifey loved em. I'm not really a fall off the bone type of person . I tend to like a little pull. I don't think anyone used any sauce. I would really like to try a brisket on the thing but I will wait until the distancing thing is over. It would take the people that live here a week to eat a whole brisket and I don't think it would freeze well.

I never bought a Bluetooth thermometers because I read lots of complaints (limited range), which limits their usefullness. Depending on your budget, I would recommend either a wireless with receiver, like a Maverick XT-30 This is a newer version of the first thermometer I bought. It's significantly cheaper then the Thermoworks Smoke.

I got tired of only having two probes, so then I upgraded to a wifi thermometer. I bought the fireboard, which is cheaper then the Thermoworks Signals. It can support 8 probes, and has cloud storage of your cooks, which is great for planning how long a cook will take, without having to keep a paper log. For example, here was my most recent one: https://share.fireboard.io/917786. It's on sale right now because they are about to come out with a new version.
