I went online, of course, to look it up since its really my first time doing it and wanted to so as to get in the spirit of things.

Directions said roiling boil, eggs room temp, pull pot off hot side of stove, place in eggs, and wait 17 minutes, then put in a pot in cold water so as to make "steam" and the egg will peel easily.

NO PROBLEM, so I thought. We had 2 eggs crack so I used them as my test eggs, still raw in the center. So I left them in the water for 5 more minutes and tested the 2nd cracked egg. Still raw in the center. Cooked for another 10 minutes and figured they had to be done by now, so I tried a trick I saw on the net. You crack both ends of the egg and blow hard on one end and the egg is supposed to pop right out. Well, egg was STILL raw and I shot egg cum all over my face and kitchen wall.

I mean WTF its boiling a egg, is it always this big a pita or what?

So I said screw the little suckers, stuck them back in the pot, set it to high and just boiled them for another 10 minutes. They come out tasting like shit and raw now, fuck it :/

Ok. Here's the Good Eats/Alton Brown method for making the perfect hard boiled egg.

1. Fill a pot with cold water and add a healthy pinch of salt.
2. Add the eggs to the cold water (no more than 6 at a time) and make sure the eggs are totally submerged.
3. Put the pot on the stove and bring it to a rolling boil.
4. Remove the pot from the heat and cover tightly.
5. Let it stand for 15 minutes off the heat.
6. Rinse eggs with cold water to halt the cooking, peel, and enjoy.

No raw centers, no gray yolks. Perfect every time.

Holy crap! Before I read this thread I thought that

THIS, item #76

This is what I do and they come out great every time. Its really simple.

Put eggs in pot
Add Room temp water (DO NOT ADD SALT)
Place on high heat, uncoverered bring to a rapid boil.
Remove from heat, put lid on
let sit for 15-17 minutes
Remove eggs, place in ice water and let sit for at least 10-15 minutes

wtf seriously?

(1) boil water
(2) put eggs in
(3) cook for 8-10min
(4) remove from water, cool
(5) peel & eat

How high are you?
No not loopy, your altitude?
Water boils at a lower temperature with increasing altitude.
If you are in Denver you must compensate for this if previously doing it in San Diego.

Boil them for a while in water. I personally don't believe that the salt trick does anything because you seriously need a significant amount of salt to increase the boiling point of water, which I think is what people put it in for.

Also what I always do is when the eggs are done, I directly pour out the water into the sink and fill the pot with cold water. This makes the egg shell come off incredibly easily.

Jerk! Now I'm hungry, and I only have soup and frozen pizzas :^(
What makes it worse is that India's Restaurant is hands down the best Indian food I've had anywhere. I make a point of eating there every time I go to Denver. It is really good.

I used this as well, but it does not compensate for two variables I had. That was living on a farm where the eggs were only days old. The older the egg, the easier it is to peel, in my experience. Also, I lived at about 6000 feet of elevation at the time, where water boils around 200 degrees or so.

I tried it for my first time a few months ago. Was not too bad, but think I could have left them a bit longer. It was slightly raw and the yellow spilled out, but the white was perfect. I don't really like the yellow that much anyway, so I just ate the white and part of the yellow that was ok.

What I really have trouble with is cracking eggs when they're raw. Usually end up with a huge mess. My best one was when the yolk went flying across the kitchen and SPLAT all over the ground. That stuff is gross to clean lol. One of these days I'm going to invent a device that uses lasers to do a clean cut that does not require putting any kind of pressure on the egg. Perfect "cracking" every time.

Supposedly if you crack both ends and blow air through one side the egg pops out whole out the other end. Im gonna try this again tomorrow and see if it really works with a fully cooked egg.

A couple of things here. First, the Alton Brown method works. Put the eggs in a pot, cover with water, and bring them to a boil. Don't add your eggs to the water afterward, they will not come up to the proper temperature. After they boil, put a lid on and wait for 15 minutes. Remove them into an ice water bath to shock them and halt the cooking.

As far as peeling is concerned, I find it easiest to crack the shell in the sink under running water, and rinse it all away. Be gentle while peeling and try to take off large segments. All the mess can get sent down the disposal.

Wow... I had no idea boiling eggs could be such an issue for people. I was able to accomplish this "difficult" task when I was four years old.
Step one- Fill pot up with water
Step two- Add eggs
Step three- place pot on medium heat and let boil
Step four- Rolls eggs around 15 minutes into boiling, let boil for another 15 minutes.
Step five- Remove eggs from boiling water and place in cold water and let sit for ten minutes (This helps when removing the shells).

I've never had a problem doing them this way.

wth ...

Put eggs in water.
Put pot on medium/high heat until it boils.
As soon as it starts boiling, move to another oven-top and cover
Wait 10-12 minutes
Place in ice water

^ This is how Alton Brown said to boil eggs and it works perfectly for me every time.

My wife makes boiled eggs almost every day.

Put eggs in cool water.
Put pot on med/high.
Once it starts boiling, let it go for 5 minutes.
Remove from heat.
Slowly add cool water to bring the temp down slowly.

Perfect every time.

We're at sea level.

Egg-------->Boiling water------>Profit

Actually I have over-boiled more than a few in my time, they cracked open. Otherwise though I don't get how you can screw up boiling an egg.
