Good cognac has a nice flavor profile as well depending on age and brand. If you ever have the chance to drink a good XO, it's divine; it practically evaporates on your tongue leaving goodness behind.
As for drinking whiskey, if you're drinking it neat then you learn to taste past the alcohol into a variety of complex flavors and aromas. There are thousands of whiskeys from all over the world each with its own story and flavor profile. Once you start to taste the differences, it opens a whole new world to you.
I had a pour of King Louis XIII many years ago and it was amazing. So smooth and so tasty and better yet it was free. It's at least 3K per bottle I think.
There are many drinks that taste great with alcohol from a solid margarita to an old fashioned to a Manhattan to a jack and coke to a white russian to a cosmo and many many more. A lot of bars have good specialty drinks as well, some are often twists on classic drinks or a wholly new creation. I've had a lot of delicious drinks going that route.
Get out there and have your local mixologist hook you up
I live about 30 minutes from distillery. It's $65 here. If you can get your hands it, Elmer T. Lee is fantastic as well. A touch sweet, but incredibly smooth.
