there is DEFINITELY a quality difference in a $1200 LV purse compared to a $300 coach purse compared to a $20 purse from target. to say otherwise is just being ignorant to the fact, which probably means that you've never been exposed to them.

lets talk about men's wallets since I know more about them and we can both relate.
you can get wallets for $5, $20 ish, $60-$100 ish, $200-300ish, and $500. I know there are more price ranges, but this is what I have seen most often, so we'll use these for my example.
I don't have any experience with $5 wallets but I'm gonna assume the leather ones are complete crap that last 2 or 3 years and the nylon ones last a long time. these are made in Asia in a sweat shop with vert little quality control in terms of material, dye, and workmanship. These look like a mixed bag of initial quality when I see them at street fairs.
the $20 ish dollar ones are brands you get at department stores when on sale, like Fossil. Still made in Asia by sweat shops but quality control is there for the stitching so they usually last me 8 years of daily use until they get worn out.
the $60-$100 ish wallets are the sweet spot, you get interesting materials (like stingray) or regular high quality leather that has quality workmanship in the stitching and dye. A lot of these wallets are made in First world nation's. These wallets also last about 8 years (for me).
The 200-300 $ wallets are like the 100 ish dollar wallets except the grain on the leather is completely uniform and the stitching is as well. some have fancy embossed patterns. These last me the same 8 year's as the $20 wallets, you're paying for the brand and minor details at this level. I own several $200 Longchamp wallets because I like the design (the credit cards insert sideways, not fron the top). these are made in first world nation's by skilled laborers who earn good wages like 99% of the time.
In the $500 catagory, I own a LV and I haven't used it enough to comment on the lifespan, but I doubt it will go past 8 years of daily abuse, you're just paying for the rarity at this point. Their laborers may earn a bit more than the $200 wallet workers and their QC might be slightly tighter.
So purses would be more fairly compared to liquor, a $10 bottle of vodka will get you drunk just like a $40+ bottle will, but there is a huge difference in taste and next day hangover.
