We have a lot of shit pizza joints here on the boardwalk. I remember watching a worker put his dirty hands in a big vat of cheese. He then put the cheese on the customer's pizza. Nasty!

Uhh, how did you expect them to sprinkle the shredded cheese and other toppings on the dough? "Dirty" how? Other toppings and tomato sauce? That's normal. In most places they only have to wear gloves if they handle it after it is cooked. BTW, when I hear "vat," I assume you are talking about a liquid but I know that's not how it's done or you would have been calling him an ambulance.

I'm also in NJ and my parents have had cafes and coffee shops. My dad told me don't worry about how many restaurants are in your area, just make sure you do it better than the competition.
Absolutely true. My daughter once commented that it would be dumb for someone to open a pizza shop in our little town because we already had three. Not long ago a family from a town a little north of here opened their second shop and chose our town, made a much better pie, and now they are packed every night. It was a good lesson for my daughter to see .
Papa Johns is the best of the big chains, but they still have something wrong with their ingredients that all the big chains do. I think it might be the quality of their dough. If I eat a single piece of pizza from a big chain, I feel shitty for the next several hours. I have never had that problem with a local place.
I agree that Papa Johns is the best of the chain pizza places. There really aren't even any local ones around San Antonio that are better. Papa Johns is the most expensive though (compared to Pizza Hut and Dominos.)
