Take those sweet potatoes and chop them up into large bite-sized pieces (long and thin is better than cubes so that they cook a bit faster). Do the same with potatoes and carrots. Garlic and onion do well in this mix too if you like them. Sprinkle with your favorite oil, salt, pepper, and lots of rosemary. Bake an hour or so.

To speed it up, you can microwave for 20 mintues (while the oven is heating up) and bake for 20 minutes.

Peel and slice about 6 of them (large ones), take 1 qt of cream and blend in 1/2 can of chipolte peppers, layer about 1/4 of potatoes in bottom of a casserole dish, put 1/4 of cream mixture on top and sprinkle with salt and pepper, continue layering until finished. Bake at 350 for an hour or until potatoes are tender.

yep. in my experience, if you microwave sweet potatoes they don't turn out as sweet as if you put them in the oven or on coals for about that amount of time.



sweet potato pie is good too. just pick up one of those cheap pie crusts + nearly any recipe on the internet + lots of marshmallows.

I also like them baked, but instead of butter I use a little olive oil, salt and pepper.

you can try....but nobody does it like me.



I cooked them for 55 minutes at 400. I ate half of one with some butter on top, it was great!

poke some holes in it with a fork
wrap it with a wet towel
throw it in the microwave for like 5 mins

set, peel, enjoy (w/ a little salt)

Peel them, cut into nice, thick fries. Drizzle with olive oil and toss to coat. Put them on a baking sheet and sprinkle liberally with pepper, sea salt (I like to use my sea salt/dehydrated roasted garlic grinder that I got at Costco), herbs (Italian herbs typically), and shove into a hot oven. Take them out when they're done.

I like to cut them into slices (about as think as scallop potato), lay them out on a cookie sheet and then brush olive oil on them. Gives them a nice crispness and tastes good, plus you don't have to wait and have them back an hour.
Then once they are done you can dip them in ketchup, ranch, blue cheese, brown sugar & butter combo, or just eat them plain.

Peel them, cube them, put in pot. Dump some brown sugar in the pot. A little water. Cook on super low heat for a long time covered till a sauce emerges. It will thicken and candy the potatoes, then dump in baking dish, toss marshmallows on top along with some pecan pieces. Put in oven for about an hour at 225 or so (long slow heat) - don't let the marshmallows burn, they'll melt, etc - but if they are getting 'dark' you are cooking them too hot. They will brown to a light caramel color, and melt into the potato mixture.

I pretty much do everything to sweet potatoes that used to do with regular potatoes since sweet potatoes are much better for you, almost no starch and thus low on simple carbs.

One of my favorite side dishes! Wrap it in plastic and put it in the microwave and hit the "potato" button

When it comes out, unwrap it, put a slice down the middle, pinch the ends, and push it inwards. Then fill the gap with butter, cinnamon, and brown sugar. Ooooo baby!

Or you can get those ziplock steam bags and do it in 5-10 minutes in the microwave.

That's what we do. Dice, add a little olive oil, season, shake. Nuke.
