I've made sweet potatoes like baked potatoes before. That was awesome.

Another way might be to blanch them, (boil for a few minutes, dunk in ice water, remove the skins.) then cut into smaller nugs, cook in a dish at 450 for an hour then coat in a syrupy blend of maple syrup, molasses, brown sugar, pineapple juice, honey, and the all important marshmallow, etc to make a sort of glaze.

I just cooked two large yams yesterday in a slow cooker - sprinkled on some brown sugar, covered in apple sauce, freshly grated cinnamon and pats of butter. This will now be my post workout snack (along with a protein shake) for the next week. Carbs, protein, yum.

I usually just bake them then throw some butter on them. When I am feeling fancy I make a glaze with a bit of butter, maple syrup, fresh thyme, plus some S&P (par bake, then let them cool, slice into coins and pan fry or grill with the glaze). Works better on yams, but still good with sweet taters.

My personal favorite?
Bake 'em.
Split, add mild amount of favorite butter or butter substitute.
Add a little brown sugar, and a little cinnamon.
Mash all together in the skin.
Enjoy nirvana.

Fries are absolutely delicious too. Make a butter dipping sauce with cinnamon and sugar, and you have a lot of Win on your hands.

Twice Baked Sweet Potatoes:
Bake the sweet potatoes. Split the potatoes longways and scoop out the centers.
Mash the scooped out potatoes and add bacon, brown sugar, and butter to taste.
Spoon the mashed potato mixture back into the skins.
Sprinkle grated cheddar cheese ontop and melt it in the microwave.
