We do and use a lot of bandwidth. Five 65" TVs, 1 Projector w/ 120" screen, Apple TV, nVidia Shield Pro, Roku on everything else. 5 Laptops, 5 PCs, one Server with VM (VPN) for downloading. I still work from home in video production (4k) so there's a lot of uploading and downloading of assets, media files, audio tracks, and such. 3 PS5, 3 Xbox Series X, 2 Nintendo Switches, Steam, Gamepass and such on the PCs. Game downloads and updates that are sometimes 50-100+ GB.

This doesn't include the guest network for when family, friends and kid's friends come over. Which is quite often.

The last time I looked in pFsense, I think I have approximately 68 devices on all VLANs across the entire network.

So 1GB U/D for only $59 a month bundled with our ATT Wireless w/ 4 phones on an Unlimited Elite Plan w/ my company discount is a deal. I pay $238 a month that includes the extra $10 off each for auto-pay and paperless billing. Free HBOMax is nice as well.

It can take everything we throw at it and I'd rather have some extra room rather than completely saturate the network.

Yes that's a big household, plus lots of huge files in video production is the kind of work I mentioned that kind of bandwidth would be great for. Video editing is the kind of work that is perfect for 1 gigabit.

As far as devices go, one person might have 7 devices, but they are probably using 1 to 2 at once.

I'm curious, everyone with gigabit have big households? I had gigabit FIOS for 2 years then realized it was a waste of money. Got on the 300/300 plan for 39 bucks a month in perpetuity from FIOS. Ping is of course still amazing. I can't even see using near 300/300 in a household of two, which is the most it will be at my place. But I can't even see it being needed for big households. 4K streaming is 25Mbps, so even if you have 4 people streaming 4K at once, you still aren't going near your bandwidth. I can see it being great for some work applications of course. But even then not for most people. Is this just marketing big numbers just like megapixels were for cameras and 244hz is for refresh rates on monitors?
Just me and wife. Daughter on weekends when she's home from college. We don't need gigabit but it's nice luxury. Would I be fine with cheaper and lower speed plan? Yes. So why haven't I changed plans? Because I'm lazy and ok with paying $90 /month for gigabit with HBO Max included.

HBOMax is worth $15 and is a great streaming service so that chips in nicely. Up here FIOS is the most reliable provider but they don't have good perks like that. Xfinity is not as good and also does not have such good perks.

I was too cavalier with monthly expenses and realized I could save a chunk of change by slimming some services down without losing any quality. Leaving Verizon for Project Fi early next year too.

This is my one splurge. I don't pay for cable or satellite TV. I don't have Netflix. I use Cricket prepaid for cell service. I own my home and cars free and clear so no mortgage or car note. Debt free.

I'm happy AT&T gave us fiber, and I feel $90 is a bargain for gigabit speed with no data caps. Free HBOMax is just cherry on top.

The problem with streaming movies is that sound still sucks ass on them. It simply is not comparable to bluray still. It sucks watching these new movies on HBO Max with garbage sound, but I still do it anyways because I'd rather do it than not watch it.

EDIT:

Oh yeah my results. I'm on FIOS gigabit but wife is watching Netflix and son playing Minecraft on Switch right now. Also have 2 Nest cameras constantly uploading video to the cloud.

My carrier is Comcast. I did a speed test through the local fiber optic carrier. Some people believe doing speed tests through your cable/internet provider gives inflated speeds. The result here are through original Cat5 cable from 1998. At that time Cat5e didn't exist.

Have gigabit fiber, don't know why DL speed is so low, upload a lot faster. Gonna call my ISP. Supposed to be the fastest ISP in the country, Sonic.net.

Edit: Well, I am on one of my wifi connected laptops, so that would affect it. I should retest using a machine ethernet connected to my router.

gigabit or bust
I had to wait a long time until they reached my neighborhood. They were supposed to contact me but I found out by buttonholing the guys on an installation truck around the corner! They had promised but delivered a year + after their promise date. But the guy who did the install was great and the difference is phenomenal. I used to have jittery YT videos on my <5mbps DSL before the gigabit install.

On Verizon wireless. Just half a block from my place, where I barely get a usable lte signal from Verizon inside and must use wifi calling, even though there are four cell sites nearby, I can get these speeds. Verizon wasted so much deploying 5GUW in places nobody needs it, and their regular network coverage has gone downhill.

I use Spectrum, which uses Verizon towers. Getting 65 down 68 up on a Sunday evening. I got 25 down and not 5 up when I had at&t. I'm on cloud 9!!!

I guess having gigabit access is not really impressive anymore given most of you get gig right at home...

But I was downloading stuff to a dedicated server and was surprised at just how fast it was. Not used to any sort of internet download to be as fast as a local network.
