As far as my recommendations, I'd say Metallica's "Garage Days" and "Garage Inc".
very good cover album by them.

And Iced Earth "A tribute to the Gods" It has selections from Thin Lizzy, Iron Maiden, Blue Oyster Cult, etc. Very Very Good Album.

Arch Enemy has cover alot of stuff too, from Iron Maiden, to Megadeth.

Thing about Judas Priest and Diamonds & Rust, it wasn't an old song when they covered it. Joan Baez released it in 1975. According to Wikipedia, they recorded it just one year after this and released it in 1977.
