Of course duck breast takes different then chick breast... in that actually has flavor, but that is not what what I'm talking about.
I would say severing chicken as duck is a bigger issue then how its cut to the point where it may even be illegal.
Additionally the first sentence of your post was about not being able to get duck...
The only non standard way about it being cut is that its typically cut a bit thicker... It's also plated a bit messy but otherwise its fairly close to what is standard, which every other picture from google shows. Somewhat related image is actually from Beijing aka Peking, which makes that the whitest duck I've seen but also makes it more authentic then anything you've had.
I suspect that is based more on how your use to it being seasoned then anything... Duck done in most ways takes remarkably similar to dark meat chicken.

My PCP is 1/2 Chinese, and he recommended a local Chinese restaurant's Peking Duck. I went with my sister (she goes to this guy too), and found the PD way fatty and was highly displeased. I seem to remember having been served PD many years ago that I liked a lot. I don't remember it being fatty and it was nice and crispy.That's because you never had Peking Duck :awe:

That still looks better than the roast duck we were served chopped up with bones and yet it was claimed to be the best Peking duck around. That's like serving a beef hot dog to some oversea population and claim they've just eaten the best gourmet beef burger...and they believed it. In the meantime people are debating - well it has some beef, and it's between some bread, and you put ketchup on it.

Duck is not only chinese duck. I've never had chinese duck and I'm not even attracted to it because I prefer the meat, I'm a stereotypical white man. Much more likely you didn't have well prepared duck. Plenty of round eye duck dishes :awe:

I love a properly seared/rendered crispy skin duck breast. It tastes nothing like chicken, it tastes like duck. Nothing else tastes like duck.
