I'm extremely happy with D7000 but I came from an Olympus E500, feature wise and ISO performance. I <3 the ability to have the Nikon take a picture every 20s (or whatever) for 300 pics, then make a stop motion movie out of it.
The reasons for choosing that over Canon, I felt that the ISO was better, price compared to 7D, focus points (which I still typically use just 1 point :/), 6 FPS (60D 5.3, still good; 7D 8.0). The 7D was sort of bumped out early, due to price, $1500. The 60D was $899 when looking but not ready to buy, then the $100 discount that was on it, went away, brought the price to $999, so it lost that big advantage to me.
You might want to take a look at lenses on both makers to see what would fit your style, one might have a lens that the other doesn't have, like Canon's 70-200 f/4 with Image Stabilization for $1200, another reason why I considered Canon.
Yes, I sold everything one item at a time, except for 1. The E500 was bought as a kit, 14.5-45mm with 40-150mm. Amazon had the 40-150mm on the website for individual listing but not the 14.5-45mm (I had a different aperture, better but different) and you have to list things in the correct area. Amazon still had listings for my old kit, single lens or original, so I went that route. Body + single lens, the other kit lens sold that by itself since I would net more money that way instead of Body + two kit lens in a single listing.
If I had known about Adorama from what JohnnyRebel said, I would have looked into that too. Would be a lot less trouble on making sure you have boxes, packing material, multiple USPS trips.
