So I'm in a dilemma now

The i5 is $235 for me
The 1220v3 (3.1ghz) is $222
the 1230v3 (3.2gh) is $245

The Xeons give me 4 cores with hyperthreading but are slower

The i5 lets me OC it but does not have hyperthreading

So which option would you guys recommend?

I already have an H60 and H80 as well as an z87 board

Considering you already have an aftermarket heatsink and a Z87 Motherboard, I suppose you want to overclock, something that you can't do with a Xeon. Xeons are equivalent or even better choices on some models than the regular Core i5/i7 line, assuming you don't care about overclock or need a feature that Intel purposefully removes from the K series (VT-d, TXT, vPro and TSX).

overclocking is somewhat important but not that crucial

My main use will be gaming with a bit of encoding on the side

i5 for gaming, i7 for encoding.

OC on the i5 will close the performance gap between the two in encoding, HT generally doesn't matter in gaming and with an OC the i5 will be noticeably quicker in core limited tasks/games.

I'd go for the i5 personally.

well, the xeons can be overclocked on 2011, thats why i wondered if they could be OC on 1150.

but, no OC - no buy.
you cant compare a 3.9 chip to a 4.7 chip.

To be fair, 4.7 is far from a guarantee on 4670K.

i7 is outside my budget and I doubt my 7950 will keep up with it

mainly 4.2-4.4ghz i5 vs 3.8ghz Xeon

I think I'll just get the i5 and upgrade once i5's become hexacores XD

For $20 more or so, get the I7 4770k and not worry about upgrading later..

Yep. For gaming the i5 will be good enough, but encoding, you will notice the difference between i5-K and i7-K.

$65 +12% tax = $73

Is the $73 worth it? I plan to keep the rig for about 5 years, then passing it along to family

Even just for a single 7950 for 1080p?

For encoding, maybe I'll do it once a month for a couple hours of video

I think so. Having the i7 will definitely give an edge for certain things, as well as being the top CPU for the socket = much higher long term value.

If you look at the best dual cores vs. the best quad cores on Socket 775, the duals have very little value, but the quads still command decent $$. This has always been the trend (top end Socket 939 stuff even has decent value in 2013!!). Of course eventually this drops off, but I think if you want to get the most years out of it and still punt it off for a respectable bit of value, i7 is a no brainer for that small amount of price difference.
