Ice cream makers... discuss

While in Hawaii I had some passion fruit sorbet, and it was the best damn ice cream/sorbet I HAVE EVER HAD (/hyperbole). So now it has me thinking... why shouldn't I just make the ice cream myself? And thus I have now delved into the seedy world of at-home ice cream makers. Looking on amazon at self-compressor models, principally at the Whynter ICM-15LS and others in the $200 - $250 range. Any experience? Thoughts? Stories? Recipes?

Screw the machine:


1 cup cold heavy cream
1 teaspoon pure vanilla extract
1 (14-ounce) can cold sweetened condensed milk

Beat the cream until it starts to thicken, then add vanilla until soft peaks form. Slow down the mixer and at the can of milk.

Pour in a bowl and freeze. Once you get vanilla down, start adding different fruits/nuts/chocolate/candy/Ho-Hos/Thin Mints/whatever you can think of.

The very first thing to understand is the name "ice cream maker" is kind of a misnomer. It's really only part of the process. You won't be getting hard, scoopable ice cream out of it...you'll have to freeze it for 6 hours after churning, because ice cream makers make soft-serve (otherwise they paddle wouldn't be able to spin!). So it's important to realize that point of an ice cream machine is to churn the mix using a cold bowl, which chills the mix & adds air so you get a smooth & creamy result instead of ice crystals. Not only that, but if you plan on using eggs, there's a cooking & chilling process involved before you do the churning & freezing parts. Anyway, there are basically 3 types of automatic ice cream machines: (well, for under $350)
  1. Rock salt
  2. Freezer bowl
  3. Integrated chiller
The rock salt models are the cheapest, although you keep having to buy rock salt to use them (not expensive...like under ten bucks for a 50-pound bag), so there is a small ongoing operational cost (plus mess). However, they are the cheapest & largest. They come in manual or electric models; a 4-quart electric can be had for as little as $30 on Amazon and you can easily find 6-quart models, which is nice if you're making ice cream for a crowd. The freezer bowl models are the cheapest "hassle-free" units...you keep the bowl in the freezer for 24 hours (typically a 2L bowl), and then it's good for a batch (maybe two). Downside is that it eats up your freezer space. These can be had for around $100 or so. I have an ICE-30BC from Cuisinart (newer models are available). The ones with an integrated chiller are the most convenient, but also the most expensive. They typically come in 1.5L sizes, although the newer ones have large 2/2.1L bowls. They are also usually larger & noisier, but can be used immediately (no pre-freezing required) & do batch after batch. I learned how to make homemade ice cream by borrowing my friend's ICE100 chiller before I invested in my ICE30 freezer bowl unit.

You can also do a lot of different things with an ice cream maker: Slurpees, Frosties, soft-serve, custards, ice cream, froyo, etc. And even within the term "ice cream", there are tons of different styles of ice cream...premium, superpremium, farmstand, slow-churned, etc. The nice thing is that you can customize the ice cream's taste & texture to exactly what you want, with no added ingredients. You can also customize the mix-ins however you'd like.

I like making ice cream at home. I've been doing new flavors every week (s'mores this week!). Like anything else, you can just grab a pint out of the local grocery store, but it's not difficult to make at home on a regular basis, given the right tools, and you can use premium ingredients to give you exactly the dessert you want, which is pretty cool.

You can probably get a small (~5 L) LN2 Dewar for $250. Ice cream in seconds if you have all the ingredients you need. It's a lot faster, more reliable and you don't have to clean the machine. The texture is supposedly better too.

I have cheap Cuisinart one I bought at Costco. It makes good soft serve. As for recipes, I have the Ben and Jerry's Homemade Ice Cream and Dessert book and that's all I need. I have peach trees and in the summer time, I get crazy number of fresh peaches so I make peach ice cream and peach smoothies.

Ben & Jerry's found in supermarket is nothing like the Ben & Jerry's of old. I refuse to buy it now even on sale. I threw away 2 pints of store bought Ben & Jerry's because it was so bad. Cherry Garcia tasted so fake and like cough syrup. And I don't know if Unilever switched to using lower fat content cream now for Ben & Jerry's but it wasn't creamy. Haagan-Daaz ice cream is still good.

Ben & Jerry's I make at home is the same Ben & Jerry's of old.

Yup. That's actually part of what triggered me to get into making homemade ice cream...Ben & Jerries from the grocery store used to be something to look forward to. My local store-brand ice cream is better than they are these days. Super disappointing for a premium product to go downhill, especially when they used to be so dang good! At least Haagan-Daaz still makes bomb vanilla.

Any machine will get you there, OP. It's more about the quality of your creme anglaise. The real work is done in the freezer anyways.

To those replying to this thread stating that you don't see the point in buying an ice cream maker -- why even bother typing? You're not addressing OP's question, and are just unnecessarily stating your opinion of which no one could care less about. Are you just trying to get your post count up?

This may not be the place for this. I saw you replied on "I want to buy an electric guitar to learn with. (left handed) Suggestions?". You said your father had 4 Jag-Stangs in left handed dexterity do you still have them?

Watch the brand of milk you use. Stick with Carnation- they use coated cans that prevents a "metallic" taste.

Good point. I'll do an experiment with my little munchkin this weekend to see if she approves.

Thanks for the pointer Fritzo. Will definitely use the Carnation brand.

Eagle Brand is also pretty solid. Some people also add in a dab of unsalted butter to the ice cream to add a bit more richness. Some even add a sugared egg yolk.

Just some tips I've picked up over the years.

Interesting. I only have Eagle brand & store-brand here. Although both have been great for me (in other recipes like dulce de leche & fudge).

I made the sweetened condensed milk ice cream recently and it was a bit overly-sugary and oddly syrupy (goopy? gack-y?), plus tasted a bit funky...the freezing process enhanced that odd condensed flavor. It was like that food cloning machine from HHGTTG...it made something that was almost, but not quite, like regular ice cream

I have the Cuisinart ICE-40 dual ice cream maker. I don't think I paid more than $100 for it but it's not available anymore. Haven't used it in years but it always did a good job.

Hurricane Irma shook a few dozen starfruit from our trees, so when life gives you starfruit.... make starfruit sorbet. Came out super delicious in the new Ice-100 maker.
