I admire the fact that you are sympathetic to the plight of waitstaff but generally servers do pretty well. The fact is that they are putting between 15 to 20% of the gross receipts in their pockets for showing up and driving food sales in the restaurant. Thats more than what the average restaurant's profit margin is (usually less than 10%)
I wont argue that most businesses are having a heck of a time staying profitable these days, but I dont think its a good excuse to shaft their people. And I suppose I could be making the problem appear to be worse than it really is.
Once I get to know the staff a little bit they start confiding in me about their problems, not the least of which is their difficulty surviving on shitty tips and rotten salary. Its likely they are just trying to get sympathy but I have no difficulty believing they are hurting for money.
