The problem you're getting, as my best guess, is not with limited VRAM, but with memory bandwidth. The HD4870X2 and GTX280 both have the same amount of VRAM, but the 280 does have more bandwidth. So in those intense sequences in Crysis, data is being transferred faster along the 280's memory bus than the 4870's bus.
The X2 has a theoretically memory bandwidth of 230 GB/s while the GTX 280 has 142 GB/s. Of course, the memory is mirrored so that would probably mean that it does 115 GB/s per GPU, making it only 27GB/s "slower" then the GTX. So the bottom line is that the memory bandwidth has nothing to to with the stutter in FC2.
FarCry 2 is just broken on AMD's cards. ATi didn't managed to make drivers that would take the stutter away and neither the game producers bothered to create a patch. FarCry 2 is just not "meant to be played" on ATi cards. :laugh:
