JA Henckel knives

My mom wantes a nice set of knives. I know Henckel is the brand togo with.

Macy's has a set of 7 w/ scissors,sharpener, and a block for 200. I don't remember which "trim model" it was. Target also has a set of 7 that are the steel forged for 150. The have a cheaper set, but they have plastic handles, and I'm not going for those. Anyone know about these and which set I should go for?

Very nice knives, but I haven't been really impressed with their quality as of late. IMHO,these are much better knives for the money.

I have a few of their four star series... you have to be careful because they've sold their name out recently (like so many others) and are making some cheap knock off type stuff.

holy crap! Not cheap. I know that quality knives cost alot, but 500+ bones for a 7 piece set is a bit more than we were planning on spending.

I have a Global Chef Knife and a bread knife. I like their handle, nice and light and well balanced. Some say they're very nice for women, ethnicities with smaller hands. I see what others have, borrow to test, and then buy. Handles, you really should try to hold it before you buy.

As I suggested to someone else, Forschner has very, very highly rated stamped knives of exceptional quality at a reasonable cost.

Just read an article in Cook's magazine on Chef knives, they reviewed 8 of them and the J.A. Henckels Twinstar was the only one not recommended. If you want Henckels they recommend the Four Star series as "middle of the road". Believe it or not the Forschner had the highest rating and is priced at $31. If you want to spend more and go higher end the Wusthoff Grand Prix series got high marks and was priced closer to the top of the line Henckel at $82.50. The funny thing is the lower line of both the Wusthoff and Henckels lines got better reviews than the respective top of the line series from each manufacturer. The article only reviewed Chefs knives, but you can make a case that the Chefs knife is the most used knife in a knife set. Global didn't do that well. Oh, by the way the way, Cook's is fairly well respected in the culinary industry.

They also came out with a review of boning knives, and the results were practically the same.

Cooks Illustrated and Alton Brown. Just about all you need!

My cousin graduated from a Portland culinary institute and she's got custom made Henckels with her name engraved in a carrying case. :Q

Whatever you do, go with a good forged knife. I've got the Henckels they sell at Target, and I think they are pretty solid knives. They hold an edge well, but aren't necessarily the most comfortable knives to work with if you've got a lot of chopping to do.

I'm in agreement with those that said go with Wusthof-Trident (I also prefer the Classic over the Grand Prix) over the Henckels. The Henckels brand used to be quality, but not as of late. You can also try Sabatier and Kyocera.

What about the Miracle Blades I see on late night TV? Those look cool, plus i think I saw a demo of them at the Fair in october. And if I act now, I'll get a paring knife, and the whatchmacallit for free.

the globals beat the wusthof's any day of the week....the globals are lite weight, razor sharp, durable, ergonomic, and completely made of steel.

my wusthof-tridents are considerably heavier, do not hold sharpness as well as the globals, just don't feel as good globals do.

to put it in perspective - my wusthof's feel like an axe, while the globals feel like a surgical scalpel - and i know of whence i speak.

Cutco 0wns Henckels and Wusthoff!!!

Actually, Cutco is a scam, but their knives are pretty good.
The scissor still cuts pennies, but we broke the tip off the steak carver

Pennies are relatively soft. We used to cut pennies in half with those bonus "Miracle Blade" scissors or whatever they advertise on TV for "only $19.95! But wait...there's more!"

You are talking about knives in the upper category therefore they are pretty much the same & all depending on preference.

I own a set of 7 pieces 4 stars Henckels with an additional 12 inch chef blade for over 10 years now, and my best friend own a set of Wusthof. I personally like my friend Wusthof better, because to me the Wusthof is a little better balance. I have had a few extra cheaper blades from Sabatier, and they are just as sharp and as well balance as the Henckels. The Sabatier handle looks rather odd, but quite comfy in your hand.

However, my very favorite knife that I use for every thing is a $40.00 high carbon steel Chinese cleaver, that I got from China town & now have all kind of stain on it. It is a perfect lightweight & sharp cleaver that is so well balance over any thing that the German/Japanese has for slicing & dicing (better than my 8 or 12 inch Henckels chef knives).

Amazon.com has the Sabatier Solo 10-Piece Knife Set in Glass Block for a steal at $169.99.

I own Globals.
The down side is they will not sharpen in a conventional sharpener.
