I thought he did speak Italian, just not as well as the others. I read some interview back when Bastards released where the interviewer complimented him on his linguistic skills, and Waltz was like "You should meet my eldest daughter, she speaks 7 languages." I think he said she was 14 at the time?

Great actor, was really glad he got recognition for playing Landa, totally deserved it.
