Obviously you don't come to the counter with 20 bags of fruit and veggies. No shit it's stupid easy if you have all the numbers memorized from previously working there, or if you're a fattie that never buys produce its simple to scan barcodes.
It is not simple to find and enter 20 produce numbers. It is much more simple to hand them to someone that enters them daily.
Uh... every machine I've used has a an alphabetical list of items, with big pictures, in a grid where you start typing in what you're buying and it narrows down the list as you type. Then you tap the right picture/label, enter quantity or weigh it on the scanner, and you're done. It's really, really easy. There's a button on the main screen that says "look up item". And if you want to be even faster the codes are on big, colorful stickers that are on practically every fruit and some vegetables.
You must have never really used self-checkout or live in the boonies if you have both no self-checkout and machines that rely solely on numbers... do the checkout lines still use mechanical registers? Lol.
