Hey long time anandtech reader for over 20 years, I have a self built PC that is need of a mobo/CPU upgrade but unsure as to what go with.
Back in the day the thought of swapping hardware and OS was something to look forward to, but now it's more of a chore to get out of the way in old age. This might even be my last self build, I’m just squeezing what I can from the parts I already own.

Corsair CX 430 PSU
Intel Core i7 7700 Kaby Lake
Gigabyte Z170X-UD5 TH-CF
16GB DDR4 2400 [XMP 3200]
Corsair H100i Pro CPU water cooler
RTX-2060
1440p 144Hz monitor
Mostly desktop, video encoding and some gaming.
Does the new Intel B560 and Core i5 11600K seem like a decent choice, cost isn't too much and leaves a little room for CPU upgrade or does this also require a PSU upgrade ?
Or just spend the money on something high end like a Ryzen, what's the best I could get away with without having up swap PSU, RAM etc.
