Just eat the raw/vegan foods you want that fit into a low carb high fat diet. Around three years ago I lost 80 lbs. by first staying under 100g of carbs on a daily basis, and then by using a ketogenic diet to restrict net carbs to less than 30g per day. While on the ketogenic diet, I would eat raw vegetables: broccoli, green beans, green peppers, baby spinach, arugula, romaine, bok choy (this was usually cooked) - basically if it was a green vegetable I was eating it. I also ate fruits that were low in sugar and higher in fiber - strawberries, blueberries, blackberries, raspberries, avocado, tomato. I think you can incorporate a lot of vegan/raw foods into a LCHF diet.
None of the foods I've mentioned are going to produce undesirable results in regards to eating them with Type 2 Diabetes.
