I was wondering if anyone here has made limoncello. I am interested in making some this weekend, but want to find a sure-fire recepie first. I found this one:

Hello everyone, my limoncello has been sitting in the jar for about two months exactly. Tonight, I am mixing it with the simple syrup and letting it sit in the freezer for about a week. I used 2.3L of Vodka and about 25 lemons.

Wish me luck!

my mother makes this stuff....shes a full blown moonshiner....she made so much one day I walked into her house and had to leave, the odour was so overpowering that I had an instant headache...she never noticed anything lol

It takes a couple of months for it to get good, apparently... but.... this should be worth it!!!

I believe selling/sending alcohol over state lines is illegal.

I had some when I was in Pisa and it is so freakin' tasty!

I ended up buying the Lemon Cream though, because I liked that even more!

That recipe isn't too bad. It's a lot weaker than mine (she uses much less vodka), but the part that concerns me is a few things you shouldn't do. When making simple syrup (dissolving sugar into water), you shouldn't let it boil. Heating up the water is all it takes. And don't use a damn potato peeler for zesting. Get a micro plane (I'll link to it when I can find one--lizardth will know more about them than I--PM her).

Also the type of vodka you use matters a lot. I have found that Skyy makes the best limoncello, even though I wouldn't drink the vodka otherwise. The more expensive vodkas don't change the flavor much, and the cheaper ones make it taste like ass. The original Italian recipe calls for grain alcohol, and the closest we have to this is Everclear in the US. Don't use Everclear--it just makes the limoncello taste like ass. Using vodka is going to be strong enough to kick everyone's ass anyway.

Don't send your limoncello through the mail. This will generally get you in trouble in any state, but some moreso than others.

If anyone is interested in a recipe, PM me, and I'll send it your way. I do batches in a 5 gallon carboy now. 6 1.75L of vodka, 60 lemons, and 18 cups of sugar. Makes about 25 750mL bottles worth. Yeehah.

It is "ready" in a month: 2 weeks + 2 weeks. The longer you let it sit, the smoother it gets. Also, there are many other types: orange, lime, even chocolate (no clue how to make the later). Also some people put vanilla extract (just a bit) to make the taste smoother, but I haven't tried that yet. I've been doing this for about 6 years now, so if you have any questions, let me know, and I'll help with anything I can.

I always thought it was made with Grappa.

How do you make the simple syrup for that much? A lot of batches or what?

Could you PM me the recipe, I used to have yours but I think I lost all my PMs.

And yes Everclear makes it taste like crap.

zest is just the yellow part. if you're good you can use a peeler. or you can just buy a zester. or a microplane.

Mmmm, I love lemoncello. I've never tried making it myself, though I've considered it. The kinds I've had are sometimes a bit sweet for my taste, and I like to control the flavor. I think I might try it on a smaller scale -- 25 bottles is a lot!
