I liked the characters in Hellsing, but the anime/story itself was weak, no argument from me there. Berserk didn't feel rushed to me, having read the manga I don't really see what you are talking about. The ending to me was very powerful and just made me want to get up and check every second for the next manga chapter .
The Hellsing anime started out right, but went into some weird story line that seemed to try to be more mass appeal (OMG ALUCARD = DRACULA!? type of stuff). The "new" OVA Hellsing Ultimate follows the manga using the Neo Nazis and such. It's actually quite crazy at times and carries the manga's somewhat cartoony feel (as it switches to the lackadaisical animation at times).
Shin Seiki Evangelion is
way overrated by people. People applaud it as being some great psychological anime when it was only written by a crackpot that tried to off himself.
Also, when it comes to "high quality" anime, people tend to have different tastes as what I consider high quality might not be the same for you. Per that, I actually like shonen anime, and although I do find that the animation on these tends to become subpar on the long drawn-out series, I usually like the story lines (excluding fillers). One Piece is still one of my favorite anime series. Pretty much read just about all the manga chapters (lacking on the newer ones) and most of the episodes (I ignored the gap between K-F and the people doing the HD TV-rip episodes).
Oh and I must say that Shounan Jun'ai Gumi and Bad Company are better than Great Teacher Onizuka by far. I enjoyed the first half of GTO, but found myself getting bored in the second half. Shounan and Bad Company, which also feature Eikichi Onizuka and his partner, whose name I forget. Shounan is more of a comedy where Bad Company is where the two meet each other. The anime for Shounan Jun'ai Gumi is being subtitled at the moment as well and I've seen... I think 2 episodes come out already?
I don't really watch much anime anymore as it's a lot harder to capture me into the series. There are a couple series that I read the manga for and watched the anime, but it just didn't get to me. I read Wangan Midnight, but the anime just didn't do much for me... maybe it's because the chapter:episode ratio seems to be 1:1, which is absurdly low and if you've read the manga, tends to make it too drawn out.

<== knows little about anime, but roommate says it's funny.
Jungle wa Itsumo Hare Nochi Guu is the full title and it's quite an amusing anime, but it's very ... very weird. There are two sequels to it. The title translates into something like "The Jungle was Normal, then Came Guu" or something like that. I love the Christmas episode with their depiction of Santa Claus .

Oh, one last one. Battle Programmer Shirase (BPS). Great Fun to Watch.
Battle Programmer Shirase was great, but definitely too short. I think it's better if you're more of a computer nerd, because it might hit home a little bit.

Grr the ending to that series pissed me off... he was such a man whore.
I've been thinking about getting into Romeo x Juliet, as I should have all of the episodes (I'm a download addict, if it comes out, I will download it) and maybe giving the Blue Dragon anime another try... the first episode didn't grab me too well. What I really need is another stage of Initial D .
