though really, I was hard pressed to tell the difference between a much lauded smoked meat sandwich versus a typical pastrami on rye.
My wife is the germ bloodhound. It's full of questionable parts as is, and handling it multiple times per day, and exposing it to air and bacteria due it in fast. I'm no germophobe, but I'm very particular about my food. When I was young, I got bad lunch meat a few times. I didn't get sick from it, but that's usually because I tossed it after seeing it's disgusting texture or color. I just don't need it. There's plenty of good food to eat without eating that crap too often. Shit's bad for you, even in the best condition.

Nobody said anything about sammiches. Just lunch meat. I'll allow deli cheeses too.
