I am looking at a couple multi-processor systems I am thinking of buying. My question is, does MacOS make better use of dual CPUs than Windows does? Do they actually both work, or does one just sit idle most of the time like it seems to in Windows?
Yes, OSX and Mac-apps are more tuned for dual procs (Photoshop, etc.) than Windows apps.. that is one of the good things about closed software/hardware. It really does depend more on if the particular app you want is written(properly) for SMP or not.

It has nothing to do with the proprietary nature of the hardware/software combo. As soon as more dual core x86/x86-64 chips are in use, you'll see the same thing happening. It's just because SMP Macs have been common-place for longer than SMP PCs.
