Making dinner for two. Suggestions?

anyone have any good recipes for 2 people, or any culinary websites that cater to the couple? the only food i ever make goes from the freezer to the microwave and im trying to expand my horizons. i need 5 solid recipes. help from some of the other married people out there?

rules: inexpensive, tasty, no seafood (allergies)

pesto is the easiest thing to make. you will require a food processor , fresh basil , pine nuts, garlic, olive oil, and a pinch of salt. and 5 minutes to throw them all together
use it to top pasta

Recipe 1:

Gather a can of ready whip, a bottle of chocolate syrup, and your SO. Whip lightly for 30min or until firm and creamy.

1) What kind of time are you willing to put into the meals? 5 min, 30 min, 2 hours?

2) Do you have any kitchen equipment that may help those who don't cook much (bread machine, food processor, etc)?

3) What types of foods do you like (ethnic, vegetarian, meat and potatos, etc)?

4) Mild and boring or full of herbs/spices? Sadly, too many people perfer mild and boring.

5) Healthy or don't care?

We just need more info.

chicken scampi.....
Go to your grocery store and get some fresh green pepper, yellow pepper and red bell peppers.
Then make sure you have italian seasoning, chili power, fresh garlic, celery salt, and basil.
Defrost two chicken breasts until you can cut them into small strips.
Start to boil Spaghetti noodles, i use wheat.
Drop some canola (SP?) oil into a pan (enough to cover the bottom but not much after that. Put all peppers and a small bit of garlic in the pan. After the peppers are nice and soft put the chicken slices into the pan then apply the spices listed above. Cook and stir until chicken is finished (i sugguest cutting the chicken as it cooks into bit size pieces).

By this time the noodles should be done, strain them and put them into the pan (with the pan off the heat. Mix noodles with meat and veggies and there you go. Very tasty dish and very healthy also.

Chicken Piccata ( flour, eggs [optional, recommended ], lemon, butter, capers [ salty buggers, not too many ] ). If you get the thin sliced chicken from the grocer you won't even have to cut anything. Cooking time is just a few minutes.

The sauce is key, so google for preparation ( most are butter/lemon juice ).
Serve with capellini and vegetable of your choice.

Before you leave for work in the morning:

In a crockpot put the following;
1 3-4lb pork/pot/corned beef roast
1 1lb bag baby carrots
1 onion - quartered
1 large handful small red potatoes
2 bay leaves
10 peppercorns
cover with 2 cans of low sodium beef broth/stock

Cover crockpot, set to hi.

Eight hours later come home, serve with crusty bread.

Chicken Casserole
Go to store and buy:
a bag/box of breaded chicken (if boxed get 2).
one package of shredded Mozerlla(sp) cheese
one large or two medium bottles of tomato based pasta sauce of your choice (Like Ragu or Prego, they have different flavors)
one package of egg noodles.

Cook chicken acording to directions.
Cook pasta according to directions.
Heat up sauce in microwave.
Pour drained pasta into casserole dish (13x9 pan usually) You will not need all the noodles.
Cut cooked chicken into small chunks and place over pasta.
Pour sauce evenly into dish and return to oven and the temperature of the chicken.
Let warm then remove and add cheese to top. Return to oven.
When cheese melts you are ready to go.

Bread in a bag works well with this and a salad makes a good start to the meal.

1. maybe 30 minutes to an hour.
2. ive got all the pots/pans, KA mixer, blender, crock pot, roaster, no food processor... my wifes like to cook so she has a bit.
3. we like all foods. nothing in particular.
4. herbs and spices are good. i shy away from boring.
5. i wanna get fat. not really, but healthy is not THAT important.

Ants Climbing Up A Tree

Easy and fairly cheap, and good! I use a different recipe, but this one I found online looks good to try.

INGREDIENTS:
? 4 ounces transparent bean thread noodles (also known also vermicelli or glass noodles)
? 5 dried Shiitake mushrooms
? 1/2 pound ground pork
? Marinade;
? 1 tablespoon light soy sauce or Kikkoman
? 2 teaspoons granulated sugar
? 1 teaspoon sesame oil
? Pinch of cornstarch
? Other:
? 1 small red chili pepper and 1 teaspoon chili sauce, or 1 tablespoon chili sauce
? 2 slices ginger
? 2 green onions
PREPARATION:
Without removing the string wrapping around the transparent noodles, soak in hot water until they are pliable (about 5 minutes). Drain well. Cut the noodles into shorter lengths and then remove the string wrapping.

Soak the dried shiitake mushrooms in hot water to soften.

Reserve 1/4 cup of the soaking liquid, straining it if necessary to remove any grit. Cut the mushrooms into thin slices.

Add the marinade ingredients to the ground pork, adding the cornstarch last. Marinate the pork for 15 minutes.

If using the chili pepper, cut in half lengthwise, remove the seeds, and chop coarsely. Finely chop the ginger. Cut the green onion on the diagonal into 1-inch pieces. Heat the wok over medium-high to high heat. Add 2 tablespoons oil to the heated wok. Add the marinated pork. Stir-fry until the pork has changed color and is nearly cooked through. Remove from the wok. Clean out the wok.

Add 1 tablespoon oil to the wok. Add the chili pepper and ginger. Stir-fry briefly until aromatic. Add the dried mushrooms. Stir-fry briefly, then stir in the chili sauce and the noodles. Add the reserved mushroom soaking liquid in the middle of the wok. Return the ground pork to the pan. Stir in the green onion. Mix everything together and cook briefly. Make sure the pork is cooked through before serving.

Edit: If you don't have a wok, just use a big frying pan. Thats what I use.

Try this receipe, all women that I've cooked for have loved it. Spaghetti on one night and pizza later in the week.

Near the beginning of the week make this:
* Chop 1/2 an onion (whatever color you perfer), throw it in a medium size pot
* Add 1 tbsp garlic (if you have time use a garlic head, but with a 30 min limit, go with the prechopped stuff)
* Drizzle with oil (preferably olive oil if you have it)
* Cook on medium high for a few minutes until it smells good/starts to brown.
* Add 2 cans prechopped tomatoes (standard size, I think the standard size is ~16 oz)
* Add 2 cans tomato sauce (again the standard size can)
* Add 1/2 tbsp to 1 tbsp salt, ground pepper, dried basil, oregano, and parsley (leave out any if you don't have it or use a combined italian/pizza seasoning mixture).
* Add 1 tsp chili powder or dried red pepper or cayenne pepper or anything hot.
* Simmer on medium low for 30 minutes.
* Add more seasoning right at the end if you like it full of flavor. I almost double it, half in the beginning and half at the end for two layors of flavor. But I like my food to burst with flavor in my mouth. Big hint: if it tastes too much like tomato, then you didn't add enough salt.

While that is simmering:
* Chop 1/4 cup to 1/2 cup of each of these: mushrooms (~2) and green bell pepper (~1/2 pepper).
* Optional: Fry up any meat that you may want. Ground beef / turkey works well.
* Boil some pasta.

When the simmering is done:
* Divide the sauce into two. Put half in the fridge or freezer.
* Add the meat/mushrooms/green pepper and simmer a few more minutes.
* Optional: add a splash of alcohol. Try brandy or red wine.
* Top pasta with the tomato sauce and eat with grated parmesan cheese.

Near the end of the week:
* Take out out frozen sauce a day early if you froze it.
* Simmer sauce ~30 more minutes once it has thawed, it'll become thick.
* Prepare a pizza crust (pre-packaged, boxed, or even with a bread machine it takes less than 5 minutes of labor).
* Chop ~1/4 cup of several vegetables/meats. Suggestions pick 3-4 of these (prechopped black olives, onions, pepperoni, jarred artichokes, red bell pepper, mushrooms, etc).
* Optional but wonderful touch: roast some garlic/chilis. This sounds difficult but it is easy. Coarsely chop 1/2 garlic head (peeling will be time consuming, but worth it). Put garlic on a cookie sheet/pan. Drizzle with oil. Put chili peppers (~2-3 jalepenios worth, or anaheim, or red fresno, or thai, or whatever) on cookie sheet. Put under broiler for 5 minutes. Optionally peel the chilis and chop.
* Most of a bag of white cheese.
* Spread sauce and toppings on pizza crust.
* Bake ~20 minutes at 400°F.

Two meals out of one nice base. Pasta should be just over 30 minutes and pizza just under an hour worth of time.

Tonight, I'm using my pasta sauce to cook this very pizza for my GF. The toppings tonight will be vegetarian: artichokes, pine nuts, red bell pepper, roasted garlic and roasted red fresno pepper. I made the pizza crust and chopped the veggies last night, so today it'll take me only a few minutes of labor.
