Found this article while browsing fount it to be really amazing since a potato farmer decided to prove naysayers wrong by consuming nothing but spuds during a few months. Afterwards not only was he still alive and well, but also ended up becoming healthier on top of this. 20 potatoes per day....

Obviously a potato farmer would eat the smaller ones that don't make the cut for grocery store bags. Healthier though is questionable. You can fast and temporarily improve some vitals and lose a few lbs but you're decreasing your body's nutrient stores and some of that weight loss is bound to be muscle.

It isn't a sustainable diet so I see little useful in his doing it. We already knew that cutting down calories and fat would benefit anyone who eats an excessive amount of either, but you still need a balanced diet.

What were the "naysayers" saying exactly? That he'd die? That wouldn't be expected in 20 days. A reasonably healthy person can eat nothing and survive that long as long as they have water. That he'd hate potatoes from then on? Maybe!

I'm pretty sure I'd feel miserable if I did that. I could survive a shitty diet but I feel like shit if I don't get my nutrients.

Edit: TIL, potatoes actually are one of the few non-meat sources of complete amino acids.

It was two months, but your point still stands. The Irish lived primarily off of potato until the famine. Potato is pretty nutritious for what it is, and dirt cheap. There's no reason for any American to be hungry while potatoes exist.

As long as they arent fried, potatos are rather healthy, containing many vitamins and nutrients. I would eat them a lot more if it didnt take an hour to bake them.

Germans survived on little but potatoes and cabbage in the aftermath of WWII. It actually was a fairly healthy diet.

I enjoy potatoes but eating them with nothing else beyond maybe salt for 2 months sounds like no fun.

Favorite way to have them = German potato salad w/excessive amounts of bacon.

German potato salad is the best base IMO. Living in the south, everyone makes southern style, and it is bland and uninspired by comparison. I have tweaked the traditional recipe over the years, but a form of vinegar and sugar are still intrinsic to the dish.

Thought you might get scurvy, but it appears there is ample vitamin c to take care of that. Could end up with rickets though.

I make potato salad every now and then. I like it with egg.

It doesn't take an hour to bake a potato. Plus there are microwaves, you can boil them or roast them in the oven...

The most unhealthy ways to eat potatoes. Even a fully loaded bake spud(500 cal) is much better if eaten for the meal itself.

The naysayers were saying how unhealthy the potato was for eating, blaming the humble spud for diabetes, overweightness, and other health issues.
