Currently doing mostly Xbox One X console gaming using a Sony 49X900E TV.
I also have a HTPC hooked up to my JVC X970R (1080p with eShift) projector which I could use for gaming.

Assuming I didn't want to invest in Acer Predator x27 or or Acer Z35P monitor for a new high-end gaming rig I'd like to build, what would be the best graphics card to get that would maximize my gaming experience on either my 49X900E or JVC X970R projector?

Alternatively if I did want to invest in one of those new gaming monitors, which graphics card would be recommended then?

I'd be looking to play Apex Legends, Skyrim, etc. on the PC mainly in the interest of improving graphically on my current console gaming graphics.

No limit on budget. Specs not sure what you mean - provided as much I think as needed to recommend? more about matching to maximize on existing display devices.

Your current computer specs, CPU, RAM, PSU.. that you plan to game on, if you have no budget limit then get a 2080 Ti, the fastest consumer GPU you can buy though expect to pay $1k-$1.2k if that's too rich the 2080 and 2070/super/Ti are also high end that don't require you to harvest a kidney to buy one. On the AMD fron there's only really the 5070 XT that is on par with the 2070/super from Nvidia.

I see. So the fact I don’t have a really high end computer monitor shouldn’t limit me on a GPU.

Would a 5070XT allow for game graphics all on Max settings on most major titles (including GTA V) with smooth gameplay?
Or would a 2080Ti be required to assure smooth playback?

yes, 5700xt or 2070 and above will allow you to play max settings at 1080p/1440p upto 120fps unfortunately such performance doesnt exist at 4k with current GPU's whilst the 2080 Ti would be the best choice in this regard, you would still need to lower some in game settings to acheive 60fps but on any of the aforementioned you will have much noticeably better gameplay and IQ than of that on a console

I see. And so that would hold true even using omwither my Sony 49” tv or my JVC projector as a display? Thought I’d be limited somehow where it wouldn’t be better than console gaming.

Like what I mean is am I better off for PC gaming on the Sony 49X900E TV or with dual Asus VG279Q monitors?

Or am I better off with a single Acer Predator x27 over the 49X900E? It's much smaller of course but would the PC gaming experience be better since I'm going to invest in a top-end GPU?

Some TVs aren't the best for gaming. Head to rtings.com to get a good look at how TVs perform in games (and lots of other things)

Excellent, that's good. So benefits of things like G-sync or freesync you get mainly in monitors I guess won't matter much for now. I'll plan to game on the Sony TV and build up my gaming rig with a 2080 Ti.

I've always been an Intel guy, but may do an AMD build this time around.

My main use for it is to game on it so as to experience greater quality than I'm getting from my Xbox One X on the same TV monitor.

oh it would be night and day in quality compared to the xbox. G-sync and free-sync aren't available on this TV so you should switch between vsync enabled and disabled to see what suits you best, with vsync off you might experience the "tearing" effect, this can vary in how noticeable it is with different games/engines etc so like I said, just test both and find what works best for you, you can create a custom graphics profile seperately for every game that will automatically change this and other settings depending on the game you launch, afaik both AMD and Nvidia have this ability.
