if installed in such a way that they are not where a hole in the mb is for a screw can and will they ruin your day

Probably ruin your day. If you do this, there's a good chance that the standoff will contact the traces on the board and you will not boot. Also possible to damage the board.

i seriously doubt that; hardware is designed so that even an (uncoordinated) monkey can work with it.

just use the plastic ones and no do not put your motherboard
on top of metal standoffs where there are no holes or you will
most likely suffer from what lenjack said.

I have already had to use little fiber washers between the brass standoff, the bottom of the motherboard, the top of the motherboard and the screw. Completely insulating the motherboard from the screw and standoff. I use the plastic ones when I can (I have also seen these that screw in, and also come with a plastic (nylon) screw to hold the motherboard to the nylon standoff.)
