It makes the meat slimy and tough to chew. I don't like slimy, I want something substantial I can bite into.

I hate gooey, lifeless food in general and don't understand people who eat undercooked eggs.

Don't know what kind of medium rare steaks you order but the one's I make, or order, melts in your mouth with yummy goodness. Enough texture to chew but melts in quick order so you can finish your steak w/o developing TMJ issues.

I agree on undercooked eggs as well. Over hard is the way to go unless it is on a burger. Then Medium is okay.

Personally I feel the same as OP. I do like the steak Medium/Well though.

On running eggs though, that I love. Nothing like easy over egg on cast iron > toasted muffins.

I prefer medium (or somewhere between medium rare and medium on this image: http://chicolockersausage.files.wordpress.com/2012/01/cook-a-steak-blue-rare-medium-welldone.jpg). I don't enjoy the texture of steak that is still deep red in color.

My wife gets medium well or well. When we're at places that cook in front of you (ex. hibachi places), her steak is usually cooking for nearly as long as the chicken.
