I always loved that excuse, for those who don't know it ain't blood, it's Myoglobin and water, and it's good for you.

I'm not arguing against how people want to eat their steaks, but does blood go through some kind of metamorphosis to become myoglobin? It looks like blood to me.

No, myoglobin is just a protein that carries a lot of oxygen in muscle tissue. It is similar to haemoglobin in that they are both oxygen rich, but haemoglobin is what stores oxygen in red blood cells, myoglobin does the same but for muscles. It just happens to be highly red pigmented. When mixed with the water that is already in the meat, looks very similar to blood, but is very different from blood in actuality.

Medium rare is the bomb. I will send back a steak that is cooked more than medium rare.

same, if it is rare when i order medium rare, I am totally fine with that (unless it's legitimately cold). But if it's over cooked I will ask for another steak.

Yes there is.

Some places cook it so you barely see pink in the center.
That's not medium rare, that's medium.

Some other places make the outside look almost black/burnt but the center is still drippy with blood.
That is cooked badly and there is no blood in the meat (or very little anyway).

Truth is many do not know how to cook but the top reply:
"Some places cook it so you barely see pink in the center." is the proper way to cook it.

You are probably looking at a $300 meal for two before alcoholic beverages.

Eh, probably not that much, but $200 for 2 sans alcohol wouldn't be unheard of for me. With tip and taxes maybe $250. Unless you are ordering an appetizer or two and every side item possible.

It would be difficult to hit $300 with 2 $80 steaks and maybe 1 or 2 $10 sides and no alcohol.

I wouldn't order steak at a place that would overcook it to begin with. Ain't nobody got time for that.

I wouldn't either and I can't remember the last time a restaurant overcooked a steak I ordered but if they did I would definitely send it back.

These are the same people who hate chicken breast because it is too dry. If it's too dry then they're not cooking it right.

I wouldn't either and I can't remember the last time a restaurant overcooked a steak I ordered but if they did I would definitely send it back.

The last place I had a steak wouldn't even serve me an overcooked steak. It wouldn't make it out of the kitchen, but they cut it during plating.

I think the most my wife and I have dropped on dinner was $250 or so. Quite frankly, I'd rather buy a prime cut of filet and make a nice meal of it at home. I've spent $40-50 just on filets for the 2 of us.

Sides can add up quick but I never usually get too much of them since the steak is filling enough. Once you add in wine it's pretty easy to hit that mark.

Also the streak still won't be as good at the steakhouse. Those places get first choice in cuts and all of the rest that aren't chosen get packed and shipped to stores.

At $80 per steak, the sides will more than likely be $15-20 or so a pop. Things like Horseradish or a butter for the steak $5-10. If you don't do an appetizer or desert/coffee at all then $200 is probably possible. A simple soft drink will be in the $5-10 range. And most places at this level will have a 20% minimum service charge.

I have not been to a place where a steak hits $80 for a single person. This menu is from The Forge in Miami which has steaks around $50-60 a pop. http://theforge.com/menus/the-forge-miami-main-a-la-carte-menu.pdf

Morton's (which is probably more well-known) is also only about $50-60 for a steak, they are more reasonable on their sides because they are made for sharing and they don't charge for every little item.

An $80 steak is going to be a very expensive meal unless you are just going for that steak.

thats about what we spend $250. then again we don't drink a bunch with dinner.

Luckily for you I HAVE been to a place with >$80 steaks. BLT steak in DC being one such place.

I had 4oz of the Wagyu striploin. It was $100. The sides are $8-12 drinks were I think $3 for soda. Also, when you get a steak this expensive, you generally aren't paying extra for sauces, it's included and you have a choice of 8 different kinds or none at all.

Yup, the only time you will see $80+ is generally if it's wagyu. $40-70 is much more common for high end steakhouses.
