Conversation with the male barber is part of the reason I go to a barber shop.
I not sure what a high end barbershop does but I suspect it sort of like a beauty salon for men.
As others have said, a traditional barber shop is for men to talk what generally is the traditional male perspective; sports, hunting, the price increase at the feed lot, etc.. There a lot of women who are also interested in the traditional male perspective but find other venues for their conversation; sports bars, hunting organizations and clubs, the grange, etc.. Maybe it is just the west but if you think most women don't want to spend some time with other women, you're sadly mistaken. Most men I know don't want to a beauty salon to discuss the rising cost of eggs.
I suspect this high end barbershop with women barbers is nothing like the barber shops LegendKiller and others are talking about. I really doubt I could get my beard trimmed there.

Until i was 18 my dad, brother, and i would go see les the barber in my small hometown. The guy was straight out of a norman rockwell painting, and, in fact, he had a few originals in his shop. He only did one cut, close. He and my dad would talk about hunting, cars, lawns...etc. And my brother and i were just supposed to sit there and be quiet, and that's what we did. Read national geographic, hunting or car mags that he had neatly stacked up. We listened to les and *never* screwed around. It was about respect, and we respected it.
Only after he died did i find out he was a highly decorated officer in ww2. I still miss that guy.
