I am making a batch of turkey chili tonight. I prefer my chili to have beans and beef instead of turkey, but I am compromising with my husband.

How did you go about cooking that? I am interested in trying this recipe out. I have a crockpot if that helps, or do you just throw it all in a big pot and simmer?

crockpot or a big pot on low, both work, however generally you have to check a normal pot on the stove more often to prevent it from burning on the bottom as some stovetops kinda suck

I think a crockpot is the best way to cook chili indoors. If you can, cook it in some cast iron over a nice mesquite or oak fire.

That seems like a lot of meat for that size of recipe...is it pretty chunky?

Yes, it is a lot of meat, and ends up being a very meaty chili. Typically we half the recipe, I urge you to give it a shot.

This looks pretty good but I put in a lot more spices and lot less ketchup. Smoked paprika, hot paprika, cumin, black pepper, oregano, a bit of sugar - cook that up with the meat and chillis for real spiciness.

Also roast your bell peppers. Oh and chuck in a bit of dark (dark!) chocolate at the end and let it melt through.

Try adding a small amount of dark chocolate, no less than 75% Cacao to this recipe. Not so much it takes over the other flavors, just enough to add a tinge of flavor. It's an amazing accent to a perfect meal.

So I'm going to put it in the crockpot, just a couple more questions. I was told "low heat" but I have a heat setting on there that goes from like 200 to 400+, should I just set it at the lowest or is there a specific temperature I should put it on. Also I'm supposed to slow cook for many hours, but how many? Does the beef need to be browned beforehand or does it all go in the pot as is?

I like to make sure the meat is brown before the slow cooking process. It should cook for at least 4 hours on a low setting if you are using crockpot.

So I made this recipe yesterday and it turned out great. Very meaty and delicious, also put some dark chocolate in there towards the end. It simmered for 6 hours on low heat. We also cooked up some macaroni for chili mac and had some cheddar cheese & fritos to top it with. Yum!

* 2 pounds ground beef chuck
* 1 pound bulk Italian sausage
* 3 (15 ounce) cans chili beans, drained
* 1 (15 ounce) can chili beans in spicy sauce
* 2 (28 ounce) cans diced tomatoes with juice
* 1 (6 ounce) can tomato paste
* 1 large yellow onion, chopped
* 3 stalks celery, chopped
* 1 green bell pepper, seeded and chopped
* 1 red bell pepper, seeded and chopped
* 2 green chile peppers, seeded and chopped
* 1 tablespoon bacon bits
* 4 cubes beef bouillon
* 1/2 cup beer
* 1/4 cup chili powder
* 1 tablespoon Worcestershire sauce
* 1 tablespoon minced garlic
* 1 tablespoon dried oregano
* 2 teaspoons ground cumin
* 2 teaspoons hot pepper sauce (e.g. Tabasco?)
* 1 teaspoon dried basil
* 1 teaspoon salt
* 1 teaspoon ground black pepper
* 1 teaspoon cayenne pepper
* 1 teaspoon paprika
* 1 teaspoon white sugar
* 1 (10.5 ounce) bag corn chips such as Fritos®
* 1 (8 ounce) package shredded Cheddar cheese

Edit: Forgot, I threw about 8 slices of bacon in there too for more meaty goodness.

Mmmmm. There's really nothing like homemade chili. One time a family friend, Bob, came over for dinner. Bob is a large man. After downing half a bottle of scotch, 2 bowls of chili, and laughing a hell of a lot more heartily, he asks my mom, "Is there any more chili?"

For some reason that fond memory always sticks in my head when I think of chili.

Don't listen to the lunatic texans. If I made up statistics, I'd say 3-5% of the population insists on no-bean chili, the majority of chili has beans. There is no arguing with them however, so best to just ignore them.


I make a beany chili. Just made some this weekend, cut my recipe in half and did it all in a cast iron skillet, filled it up to the brim.


1 lb meat(your choice, I used ground turkey this time, cook then drain/rinse)
3 cans chili hot beans(generic!)
1 can diced tomato(chili ready or with jalapeno, or regular or fresh)
liberal application of cumin(a few TB)
A clove or two of garlic
2 green peppers(last ones from the garden)
1 onion( can do more, this time I was heavy on the green peppers)
8-10 japalenos(I half-cored them this time because I heavy handed the chili powder and it came out too mild, but that means I get to use hot sauces and make each bowl different)
chili powder(1 TB? )
celery salt(for fun! just a tsp or so)
cayenne(another TB)
whatever other spices you want to play with.
* forgot - added some fresh ground black pepper

Delicious and always gets compliments, I usually eyeball and play with the spices, sometimes strange things make it into the chili. This one was heavy on the green pepper so it's a little sweet but still great. I was too lazy to make it to the store for some habeneros but a few of them can be nice too. Always good to go heavy on the peppers, fresh are better, use bells, poblano, ancho, jalapeno, habanero, whatever you can find.

This is very similar to the batch of turkey chili I made this weekend. Except for the celery salt. I don't think celery or celery salt has a place in chili.
However, a dash of cinnamon can be nice...IDK different strokes.

Some of my secret ingredients are a little oregano, day old coffee, and ardbeg whiskey.
It's taken quite a while to perfect my recipie, and I don't share it.
