4 way from skyline FTW spaghetti chili beans and cheese. You can't beat our cheese coneys either. A lot of people ask for our chili dry but I like it nice and runny.

No problem the celery salt is something I just started to try because I have it in my cabinet. I like to play around with the spices and thought it might add some interesting sweetness, but I use so little that I'm not sure it really changes anything.

The bare bones of the recipe my family gave me as a child was

6 cans of beans, a can of tomatoes, a small can of tomato paste, a lb+ of ground meat, and onions and a bell pepper.

I play with it from there, I like to do lots of onion and spicier peppers, and I vary the meat amount as well. It's very flexible and I've made very different pots of chili with it but all are delicios. I usually make the full pot with 6 cans of beans, but I end up eating it for lucn and dinner all week and it's not a good thing.

OK the italian sausage and basil are bit weird - too much like a ragu pasta sauce - but why bold tomato paste? Sugar? Beef stock? Paprika? I mean the stock and paprika at least are *completely* nescesary and all good chilli has them.

what the gf and i made over the weekend

1 lb ground bison
1 lb ground turkey 97%
2 cans of hot chili beans
2 cans of roated diced tomatoes
1 can of roasted green chilli
1 green pepper finely chopped
1 medium sized white onion finely chopped
4 cloves super finely chopped garlic
1 super finley chopped habenaro
splash of tomato juice to make it a lil soupier
seasoned by taste using some cayene, little black pepper, little salt, very little chili poweder, some chipolte chili powder, and more mexican chili powder

Wrong. All chili has beans in it. Without beans, its Chili with no beans.

As RagingBITCH said... Chili doesn't have beans in it, so you can't have Chili without beans. That's like me saying I have Ice Cream without Beans in it. Ice Cream doesn't have beans! Yes a good number of people do put Beans in their chili, but I also know a hundred people that put fucking Bell Peppers in their Spaghetti sauce. It just goes to show the majority of people have no idea how to cook food properly.

and to whoever posted the recipe they made that had fucking Celery (WTF!?!?!) in their Chili... UGH... UGH.... UGH!

do you all realize the proper name for Chili with beans is called "Chili Sin Carne" Notice SIN because it's a fucking SIN to eat chili with beans in it.

Fuck. Off. Don't insult one of the greatest things in my life.

Cincinnati Style Chili is in a category of its own. It is clearly not meant to be a replacement for a Tex-Mex style chili.

Also, the Skyline Chili in Oakley is my first stop whenever I'm coming back from out of town because it's that good.

who the hell puts stock in their chili? are you making beef stew? no! beef bullion not needed, not wanted. add more beef!

tomato paste also is completely unnecessary. especially with 56 oz of tomatoes already in there. tomato paste is a crappy shortcut for making pasta sauce for when you're too wussy to use tomatos.

hot paprika maybe, but it's unnecessary once you've got cayenne in there.

no idea why you'd add sugar.

it's chile con carne. sin means without.

Chili SIN Carne means Chili without meat.

Chili CON Carne means Chili with meat.

I made this tonight.. forgot the worcesteshire sauce, but it was pretty good without it. Did a half recipe and not much left in the bottom of the pot for sure.

Will finish it up tomorrow.

Chili is very regional. I've had quite a few different types of chili in my travels around the country. From sweet chili flavored with cinnamon to chili so hot it would corrode the spoon if you didn't eat it fast enough. Midwesterners do like their kidney beans, green peppers and celery. I coined a phrase for that type of chili, I call it "Minnesota Mex."

I'm not a fan of Skyline----they put cinnamon in their chili, which totally clashes with the other spices IMO. I can't eat the stuff.

BTW- if you really like it, they sell it frozen in "boil-in bags" at your local supermarket's freezer section. It also comes in cans.

Also- don't you DARE knock chilimac! We have this place called Ideal Hot Dog that sells KILLER chilimac with cheese, onions, parmasan cheese, and then your mush up crackers on top. It's one of those things that you can only eat once a month or you'll die from a heart attack----but OOOOHHHH BABY, when that day of the month comes I'm one happy guy

I just made a batch of Texas style red chili. I don't use exact recipes, but this how it went. If you're unsure of how hot you like your chili (I like mine very hot) use about half the spices and half the hot peppers listed here. You can always add more in the last phase if you want it hotter, but you can't take heat out of you get it overspiced early in the process. Go slowly, work your way up to the right level for your tastebuds.

2.5 pounds of chuck roast cut into small cubes, about 1/2"
Brown the beef over high heat, pour off the oil.
Add 12 ounces of beef stock, 12 ounces of pale ale beer
Teaspoon of kosher salt
1 large onion coarsely chopped
1 small green bell pepper finely chopped
2 small jalapenos finely diced
2 cloves garlic finely chopped.
Reduce heat to simmer and cook covered for about an hour.

Stir and add:
1 14oz can of diced tomatoes
1 8oz can of tomato sauce
1/2 6oz can of tomato paste
2 chipotle peppers finely diced and 2 teaspoons of the adobo sauce they're packed in.
Tablespoon of chili powder
Teaspoon of black pepper
Teaspoon of red pepper
Teaspoon of cumin
1/2 Teaspoon of oregano
1/2 Teaspoon of brown sugar
Little bit of bakers chocolate

Mix well and return to simmer for another hour.

After the hour taste and adjust spices as necessary. Adjust liquid as necessary by adding more beef stock or adding flour to thicken it.

Cover and let simmer for yet another hour. Your patience will be rewarded. The long and slow cooking process will make the meat super-tender and the flavors will meld beautifully.

One final taste, one more chance to adjust spice levels and that's it, it's done. I serve it over rice with a little dollop of sour cream right in the middle of the bowl. This is quite spicy and the chipotles and adobo give it an amazing smoldering heat and smokiness. The sour cream will help cut it a touch.

yea, cincinnatti chili is basically an even crappier version American "meat sauce" on spaghetti noodles.

I used the top rated chili recipe on allrecipes.com. It was my first batch, and it was delicious. I don't care if it's not considered chili, it was yums.

ground beef, onions, diced tomatos, cumin, chili powder, cayenne, jalapenos, salt, pepper, smoked paprika, extra dark chocolate and beer is what i use

brown the beef, soften the onion, dump in beer and first dose of spices. cook down for hr or two, adding extra doses of spices periodically. salt to taste.

Chili should typically not have beans. If so, they should be pintos first cooked in a pressure cooker or soaked overnight. Most of these recipes are not what I would call chili though. If it has less than 6-10 green chilis in it, then it is not chili in my book and the cook is a pussy.

For red chili, powder will do. A couple habaneros in either makes it all the better though.

Chili can have beans, veggies, and whatever the hell else you want to throw in it. It doesn't even have to have meat in it.

Chile con carne is strictly meat and dried/fresh chilies with some cooking liquid and seasonings. Some people even say no to tomatoes in chile con carne.

If you're adding veggies and other shit that don't belong you might as well call it Goulash or slop or something - I know Goulash doesn't have Bean in it, but it was an example of how wrong Chili with beans is

to zinfamous, BBQ to me is meat cooked over wood. Not Charcoal or Propane. Cooking meat with Propane or Charcoal is a huge fail lol. If you're not smoking your meat over a wood fire you're grilling, which isn't the same.
