What my mom does is make an extra bit of the topping-- we actually don't coat our monkey bread, but rather cut the dough up into 1" circles and pour the cinnamon and butter mixture over it. She makes enough so that you don't need any icing at all. Mmm...

Yeah that's what I did with the leftovers. I cooked it maybe a minute too long though - the extra icing got kinda hard on the outside

I tried out gorilla bread tonight, with cream cheese. Pretty good but the cream cheese is a little too buttery for my tastes. My wife suggested mixing the cream cheese with whipped cream to add a sweet flavor, so I'll give that a try next time.

Still looking for a good icing recipe if anyone has one!
