Thanks for recipes; can't wait to try them out (my friend says my sauce is excellent, but my dough making skills are crap).

My wife makes us Pizza, but the crust just isn't right. Can't really get the rest wrong, so what was your recipe?

I think you all are seriously underestimating the ingredients of a pizza. Yes, the crust has to be right, but so does the cheese and sauce. Ignore any of these, and the pizza sucks. For me, nothing is worse than a pizza with a bad sauce; it needs to be form fresh tomatoes, fresh herbs, with the right balance between sweetness and acidity.

Most home pizzas don't get hot enough really get the crust to a crispiness it needs to be, and that's why a good neighborhood pizzeria still generally wins. Limp crust, even fresh == fail.

My dough recipe: 50 pounds high gluten flour, softball sized hunk of shortening, volume of salt equal to about 1/3 of my fist, 4.5 ounces of yeast, and enough water so that as it mixes, it forms a nipple on the top. Temperature of the water depends on the temperature of the air & flour.

As to the flour, it should not be self rising type, it already has baking powder in it and that and the yeast won't work..

I meant ordinary flour (white, whole wheat, etc).

omgosh i want to try both recipes that were mentioned tomorrow night! probably going to butcher it, but oh well! it'll give me a definite nice change over eating standard food...

Actually, pizza needs both good dough and good sauce. The toppings are flexible. As long as you have good dough and good sauce you can top it with anything and it'll be great. If either the dough or the sauce is bad nothing will make up for it.

Now I'm upset that all I have for lunch is a pastrami sandwich.

It's a damn good sandwich, but nothing like a pizza.

did homemade pizza w/ the wife and daughter (3yo) last night, let her cut up the mushrooms w/ a butter knife, we had a blast. Pizza was good but had a much more enjoyable experience making it than eating it.
